She feels at home with the people at the Club, is known by the staff, and Tiphanie has practically “adopted” her. When she is not studying or at the Club, Lizzie enjoys hanging out with friends and tries to go to the gym every day. 2 JOHNS HOPKINS CLUB A Moment with Chef Patrick Chef Corner YOU CAN’T BEAT BEETS ’ Beets are a fantastic earthy, sweet root vegetable that comes in s pink, red, yellow, orange, and white varieties as well as different sizes. They can be eaten raw or cooked. The bulbous root and leafy stalks are both edible. Select beets that are firm, smooth and blemish free. If you choose to roast whole, choose beets that are similar in size. The greens are delicious sautéed with ginger and shallots. Greens should be bright green with perky leaves and with no wilting. Before storing, cut the bulbous root and place leaves and stalks in a perforated plastic bag in the crisper. The roots can be stored loose also in the crisper. Wash the beets and greens only before using them.

MARINATED CHIOGGA BEETS – LEMON DIJON DRESSING

1 Chiogga beet sliced In a shallow bowl, whisk paper thin together olive oil, garlic, lemon juice and Dijon mustard.
