10 11 12 A REFLECTION OF THE VINTAGE 2017 Wonderful & Generous “2017 was a vintage with good growing conditions where our decisions in the vineyard transformed it into a compelling vintage.

Deciding when to harvest the grapes proved to be the most important but stressful decision as we were seeing acidity decrease while grapes had not yet reached the concentration and maturity we were looking to achieve. We waited a bit longer and the results really paid off.

We ended up with elegant reds with soft tannins in the Côte de Beaune - like vintage 2000 – and powerful, very promising whites – like 2015, but with higher acidity. A truly pleasurable vintage ready to enjoy now.”

14 SAVIGNY-LÈS-BEAUNE VILLAGE| CÔTE DE BEAUNE

APPELLATION BACKGROUND Situated 5 km north of Beaune, this village was mentioned in 936 for the first time but only took on its present name of Savigny-lès-Beaune in 1863. Vineyards have been planted here for a long time. They belonged to the Dukes of Burgundy then to the Cistercian monks. The vines are planted at an altitude of 220 to 360 meters on particularly chalky ground which is what gives the wines of Savigny such great refinement. In view of their finesse and lightness they are often qualified as "feminine wines". Grape Variety: Pinot Noir Soils: Limestone and clay on marly subsoil Appellation Area: 439.85 acres

2017 Vintage: 88 Points, Wine Advocate

15 VILLAGE | CÔTE DE BEAUNE

APPELLATION BACKGROUND In the 13th century, Pommard belonged to Alix de Vergy, wife of the Duke of Burgundy, Eudes II. In 1224 and 1240, she donated it to the archbishops of Lyon. Pommard then became the property of the Ducal estate, landed gentry and religious orders. During the Revolution, the property was split up as was the case for the rest of the vineyards on the Côte-d'Or. As Victor Hugo wrote, the wines of Pommard have "gust, inspiration and occasionally genius".

Chevalier-Montrachet forms a horizontal strip at the top of the upper part of Montrachet and is made up of four terraces with different sub-soils, giving four different facets to this exceptional Grand Cru. Bouchard Père & Fils is the main owner and the only producer with vineyards on all four terraces. That which gave its name to this vineyard can still be seen between the Montrachet and Chevalier- Montrachet appellations. Bouchard Père & Fils vinifies the grapes from this vineyard separately from Chevalier-Montrachet. The land is located in the continuity of the Montrachet and was part of this appellation at the beginning of the 20th century. Origin: 100% Estate Grape Variety: Chardonnay Exposition: East-Southeast Soils: Limestone, marly on stony subsoil Appellation Area: .52 acres Bouchard Pere & Fils domain area: .52 acres

52 53 A REFLECTION OF THE VINTAGE 2016 Surprising & exceptional

“2016 was a very beautiful vintage allowing to fully express each terroir with good concentration (thanks to lower yields) and excellent acidity. In terms of quality, the reds show a great definition of red fruits, they are expressive on the nose and round and elegant on the palate. They also show the characteristics of their terroir like we haven’t seen since 2010. The wines present the same maturity levels as 2015 but with higher acidity. The 2016 whites are promising with great freshness, citrus flavors, they are generous on the palate due to the maturity but with chiseled finish. They have a greater aging potential than the 2015s due to the increased acidity.” - Frédéric Weber, Bouchard Père & Fils Cellar Master

54 2016 VINTAGE AT BOUCHARD PÈRE & FILS

WINTER • The warmest winter since 1900, particularly in January and February SPRING • April-June: characterized by cool periods, including a particularly severe freeze in the night of April 26th to 27th. Excessively wet months. • The first half of the year was mild, but extremely wet, making it very difficult to till the soil. The mid-term budburst stage was reached in mid-April. • A hailstorm in the Mâconnais region on April 13th followed by a freeze on April 26th-27th resulted in an extremely uneven vegetative growth and losses that varied according to appellation. SUMMER • June 21st: summer solstice causing a radical change in climatic conditions and the return of hot weather • Heat and drought continued through to harvest time, encouraging flowering that, while late, was even and quick. The heat and sunshine ended the mildew pressure, which up to that point was very severe due to the heavy rainfall in early spring. HARVEST • Beneficial rainfall between September 17th and 18th enabled grapes to ripen fully just a few days before harvesting. • Harvesting took place from September 21st-October 6th in ideal climatic conditions • Frost and drought affected ripeness considerably and made it hard to choose the harvesting date for each vine.

During the winemaking process, the juice extracted was incredible, very clear and golden- like. Today, the wines have aged beautifully, showing balanced richness and acidity with fruit aromas.” Frédéric Weber, Bouchard Père & Fils Cellar Master

Despite the scorch marks which could be spotted on leaves, there was no de-leafing. • The month of August had a little more rain and was less sunny, which maintained a perfect level of acidity, allowing for ideal ripeness. • As for the high risk of powdery mildew appearing, it was caught right at the start of the vintage year and was immediately curbed leaving healthy vines. Harvest: • The harvests started on September 2 for the Pinot Noir and Chardonnay, the latter being accelerated to keep the freshness of the grapes.

107 108 A REFELCTION OF THE VINTAGE 2013 A rare, rewarding vintage

“2013 in the Côte D’Or was a rare and demanding vintage. It is considered one of the coldest over the past ten years and is unfortunately one of the underrated vintages, like 2000. It is a vintage not often talked about but one regrets when the bottle is empty!

The wines had a tendency to be closed when they were young but now it is a very pleasurable vintage, wonderful when paired with food. Very aromatic, complex, and true expression of Burgundy.”

-- Philippe Prost, Emeritus Winemaker

109 2013 VINTAGE AT BOUCHARD PÈRE & FILS

WINTER • Colder than normal winter, with temperatures particularly low in February (37°F average). SPRING • Very wet spring, especially in April and May. • 30% less sunshine than normal years. SUMMER • July brought excessive rainfall and fierce hailstorms on July 23rd in the Côte de Beaune. This storm impacted the yields from 20-40% loss. The berries that had been hit dried and fell down, which did not affect the quality of the grapes. • Flowering started three week’s delayed on June 25th. • Luckily July and August were glorious, sunny and hot. It has been several years since we had enjoyed such a beautiful weather. And this is really what saved the crop. HARVEST • 2013 was a late harvest vintage. We started picking on September 30th in Côte de Beaune and finished on October 11th. • Considering the very disrupted climatic conditions, Bouchard Père & Fils was able to obtain the optimum ripeness while keeping the grapes healthy.

132 133 A REFLECTION OF THE VINTAGE 2012 Rare & Miraculous

“2012 was a very challenging vintage in the vineyards but a wonderful surprise in the cellar. The climate was very chaotic and unsettled, with some hazards and extremes, which damaged the grapes and reduced the yields.

Despite the climatic challenges, it was an excellent vintage for the whites because of high concentration and good acidity, very expressive, high ageing potential. The reds are crisp and have opened after some age.

134 2012 VINTAGE AT BOUCHARD PÈRE & FILS

WINTER • Alternating periods of mild and col temperature, but overall a mild and dry winter. SPRING • The spring was slightly warmer than normal; however frost hit on April 13th and April 17th, luckily without any effect on our estate • More hail storms occurred in May and June, impacting the yields in our vineyards of Volnay, Pommard and Monthélie, but did not have any affect on the quality of the grapes. SUMMER • August brought hotter than average temperatures and the maturation process took place very quickly. • Since berries were very small, they took a great advantage of the heat and sunshine during the months of August and the first few days of September. HARVEST • We started picking on September 17th in the Beaune Grèves, then in the Côte de Nuits from September 20th. • Due to frost and hail storms, flower abortion and berry shot, yields were much lower than average for reds as well as for whites. • Considering the berry concentration we immediately realized that we were confronted with a scarce vintage of great quality and perfect balance.

140 141 142 A REFLECTION OF THE VINTAGE 2011 A peculiar challenge yielding great expression

“The climatic conditions in 2011 were promising, but evolved in a chaotic way. It was a very early vintage, harvest on August 29th, characterized by a long period between the flower and harvest – more than 110 days (usually 90-95).

When the wine was first bottled, there was more tannins present. After the first 3-4 years of age, the wine had become more closed and tannic. Today, the wine has transformed and is showing beautifully. The 2011s are perfect to drink today and will age even longer.”

143 2011 VINTAGE AT BOUCHARD PÈRE & FILS

WINTER • Overall, winter was warmer than normal with lower rainfall than usual, especially leading into the spring. SPRING • The spring was hot, unusually dry and sunny, which led to exceptionally early budburst. As a result, flowering was slightly disturbed. SUMMER • July experienced heavy rain showers, which required increased supervision of the vines to prevent the development of disease. • The return to warmer weather mid-August allowed the ripening process to evolve. • From August 26th, the weather became very dry and increasingly hot, which stabilized the few outbreaks of rot that had appeared on the Pinot Noirs. • Despite the rains of July and August, we were able to maintain a very healthy crop. HARVEST • 2011 was marked by an unusually long time (almost 110 days) between flowering and the beginning of the harvest on August 29th. • We started the harvest on August 29th in Beaune and Volnay. Chardonnays were picked from early September since there was a slight delay of maturity compared to Pinots Noirs. The harvest continued until September 10th under warm, sunny and dry weather.
