Thank you for your interest in participating at Harbourfront Centre in 2013. I am thrilled to be the new Vendor Coordinator! We are in the process of some exciting new changes for 2013!

This year, in the International we aim to create a new focus on products that fit into the following categories: • Fair Trade • Artisanal Crafts • Unique Designs • Eco Friendly/Organic

Food criteria will have a new focus this year. We want a balanced representation of world cuisine.

• We are looking for vendors who are interested in co marketing opportunities with Harbourfront Centre:  We want your website and all social media sites info for your company. Harbourfront Centre actively uses social media. We want vendors to maximize this opportunity!  Please share your company story-we want to hear it!  Let us know if you teach workshops. We’re interested!

New for World Café: Every Friday night from June 27 through August 31, Harbourfront Centre has a new event called “DJ Deep Fried Fridays.” The hottest DJ’s in town will be spinning on the Redpath Stage for this event. Food vendors are required to provide at least two fried food options listed on their menu. Please include this in your application menu listing.

HarbourKIDS: Toronto International Circus Festival, May 18-20, 2013

Each May, on Victoria Day Weekend, HarbourKIDS partners with Zero Gravity Circus to bring the Toronto International Circus Festival to Harbourfront Centre. Circus artists from all over the world come to dazzle family audiences with their skill. Awesome acrobats! Dazzling daredevils! Hilarious hijinks! The Toronto International Circus Festival has featured circus performers from across Canada and as far away as Russia, Mexico and Australia. Three jam-packed days of circus fun, featuring unicyclists, fire-eaters, stilt walkers, balloon sculptors, crazy clowns and so much more!

Barbados on the Water, May 25-26, 2013

The Barbados on the Water Festival is Canada's largest and most authentic celebration of the stunning island nation and the unique beauty of Barbadian culture. Savour authentic Barbadian cuisine, delight in the sounds of the island, and enjoy activities for the whole family.

Highland Dance, June 1-2, 2013

On Saturday, June 1 st The Highland Dancers Association of Ontario presents the Ontario Closed Championships where dancers perform the four traditional highland dances (Highland Fling, Gillie Calum or Sword Dance, Seann Triubhas, Srathspey & Highland Reel) in competition. Dancers from across the province test their skills and display their artistic ability for the privilege of representing Ontario at the Canadian Championships. Come witness the swinging kilts and bright jackets, flashing feet and graceful steps of Ontario's finest highland dancers. This festival only lasts one day, Sunday will include busker performances and other site animation.

BIG BAM BOOM, June 8-9, 2013

BIG BAM BOOM (BBB) is the annual signature event of Arts for Children and Youth (AFCY). The festival showcases the talents of over 500 young people (ages 12-24) from Toronto’s priority neighbourhoods. Conceived, managed and produced by AFCY’s Volunteer Youth BBB Committee, BIG BAM BOOM is a high-energy, multi-cultural extravaganza featuring music, dance, drumming, beatboxing and Aboriginal arts, as well as a dazzling art exhibition featuring paintings, photographs, videos, sculpture, fashion art, graffiti and interactive art.

NXNE, June 15-16, 2013

The most anticipated summer event in music, film, and comedy in Canada, the 19th annual NXNE (North-by-Northeast) festival will bring some of the world's most exciting and innovative artists to Toronto. The best in new music, film and interactive media, NXNE presents over 900 artists and 40 films over 7 days throughout Toronto, and will be hand-selecting this year’s Harbourfront Centre showcase.

Canada Day affords Harbourfront Centre the opportunity to fully manifest the tagline “the world in one place”!

A multidisciplinary, culturally diverse, innovative and fun extravaganza on Toronto’s central waterfront, Canada Day at Harbourfront Centre will bring together some of the most dynamic music, dance, circus, culinary and family-focused artists from across the country and around the world.

Canada Day: Kick Up Your Heels showcases will highlight hot regions of dance and music from around the globe and bring these rhythms to Toronto for all to see and participate in. The weekend will be filled with unique presentations that showcase Canada’s influence on the world stage and influences and reflections from global artists on the Canadian landscape.

Ritmo y Color, July 5-7, 2013

Back for its 9th edition, Ritmo y Color celebrates the cultural richness and vibrancy of today's diverse Latin American communities. The theme of terrain helps steer the curatorial approach by investigating the French word “ terroir '" and how one's "sense of place" informs cultural production. By partnering with some of the most forward thinking arts presenters, Ritmo y Color presents a contemporary perspective while reflecting on Latin American traditions.

SoundClash, July 12-14, 2013

The third-annual HC SoundClash Festival will focus on artists who seek to innovate and build upon the musical terrains of influence that surround them. Whether it's the digital terrain that reshapes the sound of jazz and hip hop, or the innovations brought forward by artists who seamlessly traverse the terrain of global sounds, the art featured this weekend will be that which pushes envelopes, challenges notions and makes your body move!

Within the festival, the SoundClash Music Award also exists, a prize given to the best of short-listed acts who display a raw desire to blaze a new trail within their chosen genre. The winners are chosen through a combined effort of a juried panel and user votes via our website. The top prize collects $5000 and a coveted main stage slot at one of our most popular summer festivals, Hot & Spicy.

Tirgan Iranian Festival, July 19-21, 2013

Through music, dance, theatre, cinema, literature, visual arts, cuisine and crafts, Tirgan celebrates the richness of the fifteen different ethnic groups of Iran, promoting a cross- cultural dialogue and understanding between the Iranian community and the community at large.

Classical V: Brass, July 26-28, 2013

Classical V: Brass harnesses the incredible interest and legacy of the Classical music genre within a global context by focusing on a particular genre of instrument. In 2013 the ‘aerophone’ or brass instrument becomes the star. Exploring the myriad of iterations of music that this family of instruments offers in the 21 st century, we aim to challenge conventional notions about the art form and expands on classical beyond Euro-Western frameworks – and even challenges the word classical itself!

Island Soul, August 2-5, 2013

The four day festival at HC will feature a healthy multi-disciplinary mix of music, film, gaming culture, and dance, programmed for families and multi-generational audiences. The summer theme of ‘Terrains’ will be interpreted through the lens of island cultures, based on the specific and discrete histories and cultural landscapes of the different islands. In particular, smaller Caribbean countries such as Antigua and Barbuda, St. Vincent, and Barbados will be featured, as well as the French Creole communities.

Mabuhay Philippines Festival, August 16-18, 2013

Mabuhay Philippines Festival is one of the largest celebrations of Filipino heritage, arts and culture in the City. It is a multidisciplinary cultural festival that will highlight the traditional and contemporary Filipino experience through culinary arts, music, dance, visual arts and much more throughout the three days.

Hot & Spicy Food Festival, August 30-September 2, 2013

The 2013 edition marks the 16th Anniversary of the Hot & Spicy Food Festival. One of our most popular festivals of the summer season, it showcases hot and spicy foods, food issues, music, dance and cultures from around the world, as well as the 10th Anniversary of the always entertaining International Iron Chef Competition. Under the summer curatorial focus of ‘Terrain’, the festival will explore all things hot, spicy, rustic, and urbane.

Pan American Food Festival, September 20- 22, 2013

The Pan American Food Festival promotes the best food products and celebrates the great cultural diversity of the 41 countries of North, Central and South America, and the Caribbean. The Pan American Food Festival will showcase restaurants, food producers, chefs and the variety of national and regional cuisines of the Western Hemisphere, with a spotlight on one country each year. A cultural festival of art, music and folklore will enhance the food experience to celebrate the region’s diverse cultural expressions. Flavour & Fan - Pan American Style.

HarbourKIDS: Fall, October 12-13, 2013

Our Fall programme of HarbourKIDS has a rotating focus. Past concepts have included Harvest, Monsters, and Folk. This festival is characterized by its folksy vibe, with music, crafts, workshops, and performances that reflect the changing of the seasons, the gathering together of families, and the passing on of traditions. Good food and good times abound, for all ages.

WORLD CAFÉ RULES AND REGULATIONS

Application Process 1. New and returning food vendors are required to supply menu items for a mandatory Taste Testing review by a jury panel at Harbourfront Centre. After our jury process, and upon acceptance of your application, we will process your deposit fee(s). All food vendors will receive formal notification as to acceptance. Notifications are scheduled for release April 9, 2013. All applicants will be notified of acceptance status at the email address specified by the applicant. 2. Please do not call to enquire about the status of your application. We will contact all vendors

Acceptance Criteria 3. The completed application package including: application form completed in its entirety (contact information, menu items, etc.), proof of mandatory insurance, deposit. 4. Vendors are accepted based on the menu items approved as listed on the application form and may only sell approved items. Any changes or additions to menu items must be approved by Harbourfront Centre at least two weeks in advance of the festival. 5. Food Vendors shall uphold the Health and Safety Standards as outlined by the City of Toronto and Department of Public Health. 6. All successful vendors must have their Food Handler’s Certificate, and proof of their Certificate of Business Registration.

Rules and Regulations Governing Food Service by Community User Groups, Commercial Caterers and Restaurants

As a public facility, Harbourfront Centre is responsible for meeting the Public Health Protection regulations set out by the City of Toronto, Department of Public Health. Therefore, we expect each vendor to comply with the regulations both in the preparation and service of food products intended for sale at the Harbourfront Centre site. Failure to comply may result in loss of vending privileges without refund.

The following are operational regulations for groups/individuals preparing food and/or serving food to the public on Harbourfront Centre premises.

• Harbourfront Centre reserves the right to refuse booth space to anyone. • Harbourfront Centre reserves the right to cancel the vendor agreement or to eject any vendor from the premises who is behaving in an objectionable fashion and the vendor waives any right and all claims for damages or compensation by reason of Harbourfront Centre exercising this right. • Harbourfront Centre summer festival attendance and participation are dependent upon weather conditions, demographics and a variety of other factors. Therefore, Harbourfront Centre cannot be held liable for a lack of success for individual vendors and/or poor food sales based on attendance or customer preferences.

1. TEMPORARY HEALTH PERMIT You will be required to complete an Application for Special Event Temporary Food Establishment Permit from Toronto Public Health which is available on the Harbourfront Centre website http://www.harbourfrontcentre.com/whoweare/venuerentals/vendors.cfm . A City of Toronto Public Health Inspector will review the application and may contact you or visit your premises to discuss safe food handling practices, specific to the foods you are planning to serve. All person(s) involved in preparation and selling of food to the public must attend a Food Handler Training course offered by Toronto Public Health. A Health Inspector will be on site at the World Café during hours of operation and all food vendors will be inspected. Should a food vendor not pass inspection, they will not be

allowed to operate until they are in compliance with the Health Department.

2. FOOD HANDLING a. Food must be handled and presented in a clean, well maintained environment with food handlers wearing clean outer garments and maintaining a neat, tidy appearance. Hat or hairnet is mandatory for all food handlers. b. Food handlers must follow good personal hygiene practices by washing hands appropriately and as often as required. c. Food is to be prepared and served on a washable table surface. Use separate work tables or surfaces for the preparation of raw food and ready-to-eat food, to prevent cross-contamination. d. Glove use is not recommended unless the food handler has a minor cut or burn. GLOVES ARE FOR SINGLE-USE ONLY AND YOU MUST USE NEW GLOVES WHEN YOU ARE CHANGING PROCESSES (i.e., handling raw food to ready-to-eat food). e. Only personnel directly involved with food preparation and service are permitted behind the food counter(s). No minors are allowed. f. Hot food must be kept at temperatures of 60ºC (140ºF) or over. Cold food must be kept at temperatures of 4ºC (40ºF) or under. Perishable food must be stored in mechanical refrigerators, coolers, or other acceptable means. g. Food must be protected from contamination by shields (i.e. plastic covers), containers, or other means (i.e. aluminum foil) if maintained and replaced as necessary. h. Garbage must be regularly cleared from immediate serving area and placed in containers provided. At end of day, all food must be cleared away and properly stored off premises; all utensils washed, and all equipment left in a clean orderly manner. i. Prepared food may not be kept on the ground in boxes or containers.

2. CLEANING AND SANITIZING a. All surfaces are to be cleaned after use with single-use paper towels and a sanitizing spray rinse. The following bleach and water mixture can be used: 5ml/1teaspoon of household bleach mixed with 1 litre/4 cups of water. b. This solution should be placed in a labeled spray bottle c. Spray all surfaces with the bleach sanitizer after they have been cleaned. d. Allow the bleach mixture to sit on surfaces for at least 45 seconds, before wiping. Do not rinse surfaces after sanitizing. This concentration of sanitizer will not harm food or individuals consuming the food. e. Special Events are events where food is prepared and sold to the public and occur once a year for the duration of less than 48 hours. All food must be an approved source and prepared in approved food premises such as restaurants, community hall kitchens and church hall kitchens. You cannot serve food that is prepared at home. Only single-service items (i.e., paper plates and cups are allowed for serving the customers.

3. FOOD PROTECTION REQUIREMENTS a. Ready-to-eat and raw food must be transported in a manner that will protect food from contamination and proper temperatures must be maintained (i.e. coolers) b. Condiment containers are required to have self-closing lids and separate dispensing utensils. c. A probe thermometer is required to check the internal temperatures of hazardous food. d. A thermometer is required to be stored in all cold holding units. This includes mechanical refrigeration and coolers.

e. All food must be protected from contamination at the event (i.e. covered and off the floor at least 15 cm/6 in.) f. Heat lamps are not allowed.

4. EQUIPMENT a. Each booth will be equipped with Natural Gas. Vendors are not permitted to bring charcoal or propane. b. Each booth will also be equipped with the following: Oven, Stove, Grill, Deep Fryer, Multi-compartment Sink, Refrigerator, Freezer, Multi-compartment Steam Table and a Hand Washing sink. c. Access to additional electrical outlets is provided d. One chalkboard menu for listing your items with prices. This is hung on the hooks outside your booth, and is provided. e. Vendors will not need sneeze guards in this facility

5. FOOD VENDING BOOTHS/AREA a. Harbourfront Centre will provide one 16’ X 16’ food booth, equipped the items listed above. b. Spent cooking oils and cooking grease must not be poured into our sinks. We provide a grease drain at each booth. We also provide garbage containers and garbage bags for disposal of solid waste material. Failure to follow this procedure will result in additional charges for any damages resulting from incorrect disposal. c. Food vendors must provide their own hand soap. d. Decor: Harbourfront Centre requires each vendor to decorate their booth in a way that will complement the programme. Decor items can only be taped or tied on inside the booth. Staples, nails, screws, or pins cannot be used. All decor items must be removed at the end of the vending contract. You MAY NOT place any décor outside the confined space of the booth. e. Please note: If the vendor is contracted to return for more than one weekend, Harbourfront Centre cannot be responsible for decor left on site between contracted weekends. f. Vendors may not exceed their booth perimeter in order to maintain safe traffic flow through the World Cafe. g. Food booths will be cleaned prior to vendor arrival. At the end of the weekend, vendors are expected to leave their booth and all equipment clean and the immediate area free of garbage and debris.

6. ELECTRICAL SUPPLY a. Vendors will not be permitted to use any electrical equipment which is deemed faulty or unsafe. This includes equipment with frayed or improperly repaired wires. b. Harbourfront Centre staff will inspect all equipment upon arrival to site. c. Vendors are not permitted to use their own electrical power bars.

7. MENUS An itemized menu of what you intend to serve from your food booth, including a price list for each item, must be supplied. We provide a menu chalkboard which is hung on the hooks outside your booth.

The following is a list of menu items that are not permitted for sale: • Coffee, Tea, and Popsicles • Any beverages of any kind • , Hotdogs, ( is an exception), and other foods in conflict with our Lakeside Eats . 8. BEVERAGE SERVICE a. Harbourfront Centre will operate a bar inside the World Cafe to provide full beverage service, including beer, wine, alcohol, bottled water, fruit beverages, coffee, tea and iced tea and a range of soft drink products available through Pepsi. b. Due to Harbourfront Centre’s exclusive sponsorship arrangements, FOOD VENDORS ARE NOT PERMITTED TO SELL ANY BEVERAGES OF ANY KIND.

9. PARKING a. Parking is the sole responsibility of the food vendor. You will be advised of parking and unloading schedules once your application has been accepted. b. Load in/out access will be allowed for a short period of time for the purpose of delivering and re-stocking food and/or equipment only. Vendors are allowed a maximum of 30 minutes to park and unload their goods on Harbourfront Centre property. Queen's Quay West is currently under some construction, and property access may be limited. c. Load-Out: Please ensure your area is left clean and all recycling and garbage is disposed of in on-site bins.

10. PROMOTION AND SIGNAGE a. Promotion of a restaurant or catering business is permissible if done in a manner that is in keeping with Harbourfront Centre’s mandate as a cultural arts centre (business cards are acceptable, large neon signs are not). Harbourfront Centre reserves the right to remove any signage they deem unprofessional or unclear. b. Signs/equipment which includes product logos are subject to approval by Harbourfront Centre to ensure they are in keeping with Harbourfront Centre’s exclusive sponsorship agreements. c. Harbourfront Centre will provide a sign designating the name of your booth and the region of the world your menu items originate from (i.e. Canada, Brazil, Italy, China, etc). d. Harbourfront Centre will promote World Café as part of the ongoing marketing of our site and festivals. In return the vendor will agree to promote their participation in their off site venue wherever possible and distribute print material on behalf of the event, when available.

11. INSURANCE – MANDATORY Vendors are responsible for their own insurance; this is mandatory. Harbourfront Centre is not responsible and/or liable in any way for any claim by a third party made on them for their fault or deemed negligence.

Each vendor is required to have proof of a Certificate of Insurance that includes the following:  Commercial General Liability Insurance with a minimum of $2,000,000 in coverage Products and Completed Operations, Tenants Legal Liability and cross liability should be included in the General Liability  Please ensure that the Harbourfront Centre is listed as “additional insured Harbourfront Corporation (1990).

12. INTERFERENCE WITH PERFORMANCES Vendors are asked to respect ongoing performances at Harbourfront Centre and refrain bringing any audio devices (portable stereos, radios, CD players, etc.)

13. PAYMENT Booth charges are payable by the exhibitor under the following terms:

a. Each application must be accompanied by a $500 down payment made payable to “Harbourfront Centre”. This deposit will be processed only if your application is successful. Deposits of accepted applicants will be processed beginning March 21 st , 2013. Payment methods accepted: Credit card (Visa, Mastercard AMEX), Certified Cheque, Money order. b. Contracts signed after April 9th , 2013 require payment in full. c. Vendors are required to provide a mandatory $500 refundable damage/cleaning deposit due May 6, 2013. If there are no damages or repairs to be made, this deposit will be returned to vendors three weeks after the last weekend of the season.

14. CANCELLATION POLICY a. If, for any reason, a contract is cancelled by the Vendor or by Harbourfront Centre for cause prior to the booked weekend, the $500 down payment will be retained by Harbourfront Centre. b. If, for any reason, a contract is cancelled by the Vendor or by Harbourfront Centre for cause after full payment is processed, the full fee will be retained by Harbourfront Centre c. Contracts/licenses may be cancelled by Harbourfront Centre if vendors fail to occupy the space allotted to them with the exhibit specified on their contract and be fully operational as per the times specified. NO REFUNDS after May 6, 2013 and Harbourfront Centre will retain 100% of fees.

Harbourfront Centre reserves the right to change, cancel or add any rule or rules at any time for any reasons whatsoever, and to move, relocate, suspend operating privileges or immediately terminate this agreement without prior notification to anyone.

Harbourfront Centre reserves the right to evict anyone violating any of the outlined rules of this application.

FAILURE TO COMPLY WITH HARBOURFRONT CENTRE RULES AND REGULATIONS:

Any violation may result in: a written warning; and/or loss of booth(s). Loss of booth(s) will result in all monies being forfeited. All decisions made by Harbourfront Centre are final.

I further agree that I will ensure that any personnel working or volunteering in my booth also follow these standards. I understand that failure to comply may result in my being required to leave and may prevent my acceptance for future events.
