Time to take advantage of the small win- Baked Atlantic Halibut with Wild Chanterelles dow of opportunity to enjoy one of the summer’s finest offerings: the Chanterelles Sauce subtle, earthy flavour of the golden chanterelle mushroom. There are Ingredients many ways to prepare these little beauties, but one of my favourites is • 4 Tsp butter • 1 1/2 cups chicken broth + 1 cup clam juice to serve them as the accompanying • 1/2 cup white or sweet onion (minced) • OR 2 1/2 cups halibut stock sauce to a fillet of fresh halibut. • 1 clove garlic(minced) • 1 cup whipping cream The halibut is simply baked in a • 2 Tsp flour • 1/2 tsp salt foil pouch on the grill.
