CHRISTMAS SABLES WITH STRAWBERRIES, CREAM 1 cups fl our 2 tablespoons cocoa cup icing sugar 200g butter 2 egg yolks 1 tsp vanilla essence 1 punnet strawberries 300ml cream tsp cake decorators gold powder tsp kirsch Sift fl our and cocoa together. Place in a food processor with icing sugar. Chop butter roughly and add to processor. Process to a fi ne crumb. Add egg yolks and vanilla and proc- ess to combine. Press dough out between two sheets of plastic wrap. Roll out to a 0.5cm thickness. Using a 12cm star cutter, cut out 12 stars. Place on a greased baking tray. Refrigerate for 30 minutes. Bake at 180 degrees C for 12 minutes or until cooked. Cool on a wire rack. Wash and hull strawberries and slice in half. Whip cream. Mix gold powder and kirsch together to a thin paste consistency. Technicians working at checkpoints recommend when a child needs a booster seat and have noted that many children stop using booster seats too early, particularly when the booster seat has been passed on to a younger sibling. Safe2Go is an ACC initiative to train caregivers and community based people in the correct use of child restraints so that these technicians can pro- vide consistent, quality instructions. Correctly used child restraints can reduce fatal- ity risk by an estimated 71% and serious injury by 67%. Children who are not tall enough to sit with their legs comfortably over the edge of the seat when their bottom is in the back of the seat will tend to slouch and slide down under the lap belt. This places the belt over vital organs rather than the bones of the pelvis, creating serious internal organ damage in the event of a crash.
