Maintaining the character of the facility topped the list of priorities for the sisters as they embarked on the rehabilitation project. “First of all, we had it listed on the State and National Historic Register, so it was really important to us that we preserve the historic beauty of the building and we didn’t majorly change any of that,” said Sharpe. “It still had really good bones, a lot of the original fixtures and flooring and things were still intact and in surprisingly good shape, so we [had] to restore a lot of that and kind of make everything work seamlessly from the old to the new. [It] was really important to us that we preserved the beautiful history of the building.” Sharpe and her sister are Oshkosh natives who moved away for some time, and then returned to raise their families. Both are very involved in the community, and Sharpe sits on the YMCA board, which had been working on plans for a brand-new building across from what is now The Howard. She often looked at the old building and wondered what it would take to bring it back to life. “I’m actually a pediatric nurse practitioner and she’s an artist, so she’s never done a project like this before,” said Sharpe. “Neither of us are designers. And on top of that, we opened this business, so we have 60-something employees now, and it’s just been a total change of career for myself and something new for my sister, as well. It’s just been a big undertaking that we’re pretty proud to see [with] the product that we’re putting out there for people.” The work was challenging, but ultimately, incredibly rewarding for Sharpe and Golem. “Doing any historic renovation on a building is a challenge in and of itself,” said Sharpe. “I would say that was the biggest thing. There are lots of unknowns and you try to plan ahead as much as you can, but you really don’t know a lot of what’s going to happen until you start doing the construction.” Such was the case when workers turned their attention to restoring the 10-lane bowling alley and bar area in the basement. “We just reopened it a couple weeks ago – the first weekend in January, which was the first weekend we reopened that,” said Sharpe. “So yeah, it’s really beautiful. It was originally a bowling alley and it has been throughout the history of the building, but it just needed a major remodel down there. It was in really bad shape. The boiler had flooded years ago and there were several inches of standing water down there. It was a mess. So, we remodeled that. We actually brought back the original style of the ball return … we have really high-end craft cocktails and food and all kinds of neat stuff down there. It’s very unique for a bowling alley, not at all what you’d expect.”

The last option on the list of side dishes is a bit unusual, but absolutely welcome if you have a sweet tooth like me: ice cream. Toby’s offers dinner specials every night except Sundays (probably because they’re closed on Sundays). They range from fish fry Fridays (of course) to steaks and seafood offerings on Saturdays, to frog legs, pork chops, and cod on Tuesdays, Wednesdays, and Thursdays. There is basically something for everyone here - and yes, there’s even a kids’ menu. Once you’ve had a chance to decide what you’re craving, a waitress will come to take your order at the bar. To me, this is one of the classiest touches, something that many supper clubs do that no other restaurants (in my experience, anyways) bother to emulate. They take your order at the bar, allow you to sit and relax with your drink, and then come collect you once your table has been set. If you’re smart like me, your table will have a plate of hot cheese curds on it.
