Sébastien is one of the “third-wave” of producers in champagne, pushing the envelope, but letting the grapes speak for themselves. His style is refined, but unadorned and full of minerality. He likes to say that in Verzenay, the minerality is in the fruit and in Verzy, the fruit is in the minerality. He is organic and practicing biodynamic principles.
