Back to Going Nowhere – Part Two This month the abandoned journal includes glimpses of how life used to be lived and how there are some vestigial remains, their pockets gradually and inexorably disappearing. It’s part of the ongoing argument of change for change’s sake, as opposed to styles of life we would like to preserve or survive in spite of newer developments.

When the concepts changed is difficult to gauge: perhaps when the commodity of the ticking clock became available, and the industrial need for precise time keeping. It is likely that many of these demands did not reach Brit- tany until much later, even with the collapse of its linen and hemp industry that were more cottage than factory based. Here is some of what Ladurie says: “... they did not think in terms of a fixed and continuous timetable, whether in their own fields or, in exile, in the workshops of Catalonia... the working day was punctuated with long, irregular pauses, during which one would chat with a friend, perhaps at the same time enjoying a glass of wine... The rhythm of the year was that of the twelve months and the four seasons, but these were not referred to very frequently. Dates were often fixed by reference to purely natural phenomena, not neces- sarily agricultural... at the season when elms have put forth their leaves,” though, “natural references are outnumbered by references to the Christian year... largely ecclesiastical... saint’s days (for example) were linked to various collective activities, such as cattle fairs... The saints were the friends of the workers.” It is a big extrapolation from 14th century SW France, not then France, with a different language and strong links to Catalonia, to early 20th century Brittany onwards. Somehow I don’t think the stretch is too much. If there are constructs I can find in myself then there is little stretch at all, when I begin to measure time by the seasons, and the week by the Tuesday open-air market in Quintin. Our little hamlet was once a centre of local activity. There is still a small farm with a few cows behind us. Henri is the lone inhabitant; he has a stone barn attached to his house, where we once helped him with calving one of his cows; they seemed contented enough beasts. He lives alone and speaks to nobody much. He dresses in a loose blue denim jacket and trousers with a cloth cap in all seasons. His house is bare of comforts apart from a TV; his seating is two wooden benches and a bare wood table. We were offered and accepted a glass of wine after we helped him pull ropes attached to the legs of the half-born calf. Vet callouts are expensive and might have been too late in this case. So he came to us with his false teeth out and asked for the Patron to come and help; breaking his reclusiveness. We were glad to oblige but only found out what his name was five years later from someone else. Henri gives us what we call the Breton nod from time to time, but otherwise we have not had any real interaction. This was in the

Back to Going Nowhere continued early years of the 21st century. He did ask us why we had come to this location and I still feel we didn’t give him a satisfactory answer. We currently make most of our bread in an electric bread maker with Carrefour supplying the raw materi- als; in some ways a curious turn in a cycle. The commune, as it stands, has lost its boulangerie in the village three kilometres away, so Carrefour sometimes gets our custom. The only real development in the village is the concept of a lotissement where a plot for a house is bought and a house chosen off-plan; variations of plain magnolia coloured square-sided designs. Mostly the village is deserted during the day as people com- mute to the large towns and possibly St.Brieuc. With little traffic, dogs have a habit of dozing in the middle of the road content that they will live to a ripe old age. It is unlikely that a tourist would drop by here unless they were lost or searching out a few menhirs that have survived being shifted for field space. One is part of the war memorial outside our commune’s Ma- rie. “There’s a moment when siesta time runs dry. Even the secret, hidden minute activity of the insects ceases at that precise instant; the course of nature comes to a halt...” Gabriel Garcia Màrquez, in his novella Leaf Storm provides some evidence, with this observation in the fictional South American town of Mocando that there is a time of day when time seems to cease. We can extend the observation by noting how many people locally live to a great age. Whether this will continue into the future with the sure invasion of electronic communication into our psyche remains to be seen. James Bell (Sadly, Henri died in the middle of February. Silver, the half-broken grey Astallion had finally been caught and loaded into the lorry; the living vans had been attached to the lorries or cars; and the whole convoy ground slowly out of the field in line astern. That first hop was not very far, from Bridgend to Pontypridd, about 30 miles. There I saw the big top go- ing up for the first time and joined in enthusiastically. For the smaller places they used a single pole, though the tent, like a large marquee, could be enlarged to two poles. Up went the canopy like a sail to be pulled out and attached to the outer poles, then we added the sidewalls. The seating tribunes would not pass “elf ‘n’ safety” muster today. Maybe they did not then. No one checked. A world apart. Heavy, stepped, wooden frames were set up in parallel then the planked seating was laid across. Rickety I thought, but they never collapsed during the few months I was with Claude. It was a very slick operation. Unfortunately, playing with tents was not my job. The job of agent meant travelling ahead of the troupe to book grounds and distribute publicity. Claude Fossett, the boss, would decide on the itinerary – he knew all the likely sites having been in the game all his life “Try b*st*rd so and so in Nuneaton,” he would puff. So, in theory, my young assistant, Johnny, and I were to travel ahead, for which we needed a car and a caravan, both of which Claude provided. The caravan was just large enough for two people, but it was comfortable and I cared less about privacy than I did when touring later in my career. (A caravan was a big step up from the tent men, who were paid a fiver a week, all found, and slept on the Luton above the cab of the elderly pantechnicons.) In the event, I spent far less time in it than anticipated, for alas, the fine motor car that Claude had fur- nished was a ten-year old, Mark One Cortina. Dickie Sandow, a great professional clown and long-time associate of Claude, observed that 10 years old was practically brand new as far as Claude was concerned! (Dickie was a remarkable all-rounder and the nicest of men and he helped me to fit in. He had his own children’s show that he toured when not employed by others and later I did a bit of work for him. He had been in the army in the transport corps and had picked up an eclectic range of skills. Seeing him and one of the tent men changing the engine of a Commer Karrier in the park at Pontypridd under torrential rain first showed me just how resourceful circus people were.) In truth, the Cortina wasn’t a bad car, the Mark 1 being the most stylish of the range in my view and it handled well. Unfortunately, it didn’t handle caravans well and constantly overheated. The notion of mov- ing and staying ahead was therefore swiftly abandoned. Our general direction of travel was towards North Wales aiming to arrive on the island of Anglesey for the summer. On the way, we were to do three-day tenting, necessitating two moves a week, working our way across southern England then turning north through the Midlands and up to Lancashire. Some of the moves were quite short, so returning to base didn’t matter. Anyway, the show was where I wanted to be. It mattered rather more when we were making the longer cross-country jumps. It upped the fuel bill consider- ably and took its toll on the aging car and us. So Johnny and I would set out on our daily, ever-changing commutes. Occasionally Claude had pre- booked the sites, but mostly we booked them for a fiver or a tenner a day. Some were privately owned, while others belonged to the local council. Most sensibly demanded cash up front, or on arrival. They had been had before. The publicity machine left much to chance but seemed to work. Because pre-booked grounds were the exception rather than the rule, the posters were printed leaving a white space to fill in the dates and times. We would confirm the site, write out the posters and then go round the town hustling shopkeepers to put them up and bribing them with a couple of free tickets. To make sure they actually displayed the poster the best way was to Sellotape it before going into the shop. Having established a “yes” in principle, you asked them where they would like it put, stuck it and then left quickly. Johnny was very good at it and though I

Brittany is one of the regions of Europe traditionally associated with woodenClogs footwear. The history of the Breton clog reflects the long-stand- ing struggle on the one hand between the rural way of life and urbanisa- tion, and the struggle between the Breton and French cultures on the other. A wooden clog is well adapted to local conditions insofar as it is wa- terproof, allowing people to take their animals out into the fields without getting wet feet, and it is also well-insulated, making it possible to work outdoors in the winter months without discomfort. The clog's main disad- vantage is its lack of flexibility, making walking, and running, rather ungainly, but this is not a problem for many agricultural tasks, such as scything a field, harvesting a crop, or hoeing a field - when ease of mobility is of secondary impor- tance to keeping feet warm and dry. Another reason for the clog's popularity in the region is due to the self- sufficient nature of the traditional Breton farming culture, which, from the early Middle Ages, was based on the ancient Celtic model, rather than the French feudal system. Families were given the right to manage their own farms (in exchange for tithes) rather than having to work for an overlord

Wood working represented a large part of life on tra- ditional Breton farms: the winter months were spent coppicing and pollarding trees, making faggots, split- ting wood, and preparing timber for building. Making a pair of clogs for themselves was a relatively simple matter for a skilled wood worker; all that was required was tools to cut and split the wood into blocks, an axe and a hooked, clogger's knife to shape the outside, and a spoon bit to carve out the interior. Beech was the preferred wood for clog making; beech (top right) trees were not coppiced, but allowed to grow to a considerable size over a number of years (not too close to any houses) with side branches carefully trimmed to prevent the development of knots in the wood. When the tree was felled, the wood could be distributed amongst neighbouring villages, with a single tree providing enough wood for a whole district. Clogs made on the farm were less ornate than clogs made by pro- fessional clog makers, which were sold at fairs and markets.

on a large estate, and success depended upon not being at the mercy of tradespeople out- side their immediate community for any products or services key to run- ning the farm. With the help of a few basic tools, people were able to make their own clogs out of locally-produced materials, fulfilling the need for self- sufficiency in footwear. Even though Brittany did have its own aristocracy and merchant class, it was the small-scale farm- er upon whom the Breton economy was based, and who set the tone for Bret- on culture and fashion. clogs, stained black, with decorative carvings, and leather trimmings became available. These were pro- duced by professional clog makers, who over the course of time established a separate, semi-nomadic com- munity that persisted until the early years of the twentieth century. Land owners in some of the larger Breton forests cultivated areas of beech trees (beech being the favoured wood for Breton clogs) for which clog makers could negotiate when they had reached a certain size. The clog makers would establish a camp in the forest, cut down the trees, and spend the winter months making clogs ready for sale in markets during the summer. As the towns and cities grew in size during the 1800s, so too did the demand for clogs from townspeople who were not in a position to make their own. Simultaneously, however, clogs started to acquire a stigma of being an old-fashioned form of footwear.

Bernard Kervoas is keeping the tradition of Breton clogs alive in his clog shop, Saboterie Kervoas, in Belle-Isle- en-Terre, close to the traditional clog making area in the Coat-an-Noz woodland. His workshop was one of the first to have been fitted with clog-making machines, and at its peak in the last century employed over fifty people. Breton farming suffered an eco- nomic collapse in the period af- ter the French revolution and the Napoleonic wars. Farmers lost their au- tonomy when they were forced to pay rent instead of tithes; prices for agri- cultural products fell, due to mechanisation, and com- petition from abroad; and the countryside became a place of poverty and destitution. Rightly or wrongly, the authorities decided that the solution to the problem was to bring Brittany closer into France as a whole, and for many years all aspects of Breton culture, including the language, the style of dress, and the footwear were derided. A well-known ex- ample of this being a child who spoke Breton in school being made to stand in the corner of the classroom with a pair of clogs hung round their neck. Thus, clogs lost their appeal as a fashion item, making life difficult for professional clog makers - even for those who had been able to invest in clog-making machines and workshops. They also fell out of use in the countryside, as the nature of farm work changed, and rubber welling- ton boots became the favoured waterproof footwear of farmers. However, the Breton clog has managed to survive. It is still the ideal footwear to keep by the back door and to slip on when going to the post box or the veg- etable garden. It keeps the foot warm and dry, and offers protection while still letting it breath.

Danish “Dream Cake” 350ml full fat milk Topping: 80g butter, softened 125g unsalted butter 5 large eggs (or 6 medium) 100g desiccated coconut 350g caster sugar 200g dark brown sugar (muscovado for 450g plain flour preference) Hetty's Kitchen 3 tsp baking powder 50 ml milk more on p.33 2 tsp vanilla extract

Preheat the oven to 180°C / 160° Fan / Gas 4 Grease and line (base and sides) a 24cm/9” loose bottomed cake tin. Gently heat the 350ml milk and 80g butter in a pan, stirring until the butter has melted. Set aside and leave to cool. In a large bowl, whisk the eggs and caster sugar until fluffy and very light. This can take several minutes. Add the flour, vanilla and baking powder and whisk gently until the mix is smooth. Fold in the cooled milk and butter and scoop the mix into the prepared tin. Sit it on a baking tray as it’s likely to leak a little, and bake for 35-40 minutes. Put all the topping ingredients into a saucepan and stir over medium-low heat until combined. As soon as you take the cake out of the oven, turn up the heat to 200°C/180°Fan/Gas 6 and spread the topping quickly and evenly over the top. Return the cake to the oven for a further 5 minutes. Cool in the tin completely to allow the topping to set before releasing the clip and transferring the cake to a serving plate. Store in an airtight container.

e are a small to medium sized tern often confused with the common and Arctic Terns. However we have a thin, sharp, all-black bill only becoming red just at the base in summer. We have a Wblack cap with the forehead turning white during winter. Our legs are red and in general we appear much whiter than other terns. The term roseate refers to our pinkish breast during summer. Another distinguishing feature are our very long tail streamers which extend well beyond the wing tips at rest. We can be seen with other terns on the shoreline and in estuaries where we form our nesting colonies. We nest from June onwards; the nest is just a scrape in the ground, sometimes under dense vegetation, which is left unlined. We have one clutch a year of one or two (rarely three) eggs. Both sexes incubate the eggs and care for the young. We feed mainly on small fish, molluscs, crustaceans, water insects and their larvae. We have a distinctive long and harsh “aachh” call and a characteristic “chuu-iick” Our numbers decreased in the 19th century when we were hunted for our plumes to decorate hats, and have increased slightly since then, however the predatory nature of increasing numbers of gulls has put us in the endangered category. Leek Gratin with Leek and Rice Flan This is one of my favourite leek recipes. I use Reblochon Cheese white wine instead of the sake. Traditional Fruits & Vegetables Beetroot & Garlic Strange isn't it, we eat various fruits and vegetables throughout our lives and never think about how they developed, where they originated, or how people ever managed without them ! I am still curious about some fruit and veg- etables, common in other countries, that I have only seen on a media screen, yet would love to try. But this month I have chosen another two vegetables which are common to us. Garlic is actually a herb with a history that goes back to Ancient Egypt. Brought to England and Northern Europe by the Romans, it has been widely used with great success by herbalists such as Culpeper. It is a healer for external and internal problems. Oil of Gar- lic applied to a sore or abrasion will purify and heal the wound. Internally it is recommeded for fighting “winter woes”. Used mainly for flavouring today, its health-giving properties are used in cooking. Beetroot is believed to have originated in Italy, the first clear description of what we would recognise as our common vegetable dates from the mid-sixteenth cen- tury. Although people have eaten red beet leaves for thousands of years, swollen-rooted varieties were rare. The juice was used for dying wool and cotton and in 1740 a German scientist examined the crystals that formed in beetroot syrup and realised that they were identi- cal to the sucrose crystals obtained from sugar cane. This was an exciting discovery indeed because it offered a chance to break the monopoly that France and Britain held over sugar production. There are so many more interesting facts about these two vegetables that perhaps in another issue I shall share some of them. Just like switch- ing on the electric light we take things for granted. William's War, Part 27 continued

His Sam Browne belt hung on the wooden cross. I took his belt, gathered some wild herbage that was growing at the foot of the cross and made a sketch of his grave. The flowers and sketch I forwarded to his mother, with a letter. She asked me, when she wrote again, to retain the belt and give it her when I was next in England. The belt went through other experiences before I finally handed it to her. 1917 ended, and still the war went on.

Is Rosé France's Favourite Wine? round the world rosé has been enjoying remarkable success in recent years with consumption grow- ing dramatically, not least in France. French people consume more rosé than any other nation. Sales Ahave doubled in ten years and are now about 30% of all wine sold in France – more than the total white wine. This was not always the case though. Historically, rosé wine was not highly regarded in France, where red wine was considered to be more authentic. In the land of fine wines rosé was traditionally the wine industry’s poor cousin. The worldwide image of rosé was also tarnished by two medium-sweet, pink wines from Portugal, Mateus and Lancers. Introduced in the USA in the 1940s, these brands were marketed around the world. Regarded as cheap novelty products, people came to think of all rosé as sweet, low-quality wine made in bulk for mass consumption. By the 1980s mediocre rosé was being sold everywhere, and even in France rosé was widely looked down on by the serious wine community. In recent decades rosé's overall image has improved dramatically and sales have been steadily increasing in France. While rosé is produced in most of the world's wine regions, including Italy, Spain, Portugal, the USA and Australia, France is the largest producer with the Languedoc, Loire and Provence being the major regions. French rosés are mostly dry. In Provence it must be dry to receive the region's coveted AOC ap- pellation. Provence is the home of classic French rosé and the “Provence-style” has become the industry's benchmark. In the USA, the third largest producer, rosés are referred to as ‘blush’ wines and are typically darker and medium or sweet although the trend is towards drier and more sophisticated versions. Rosé production in all French wine regions has become increasingly sophisticated in recent years, with the highest quality wines selling for as for as much as €100 a bottle, and this has raised the image of rosé as a serious wine. Internationally too, rosé is gaining market share: in the USA, sales have been increasing by about 40% a year and rosé is a major driver of the UK wine market. Rosé is now a fashion drink of choice for many younger wine drinkers, attracted not only by its refreshing taste but also the fact that the colour is well suited to placing photos on Instagram! Not all rosés are created equal! Most of us buy our wine from the supermarket rather than a specialised wine merchant and it can be difficult to choose from all the shelves of pink bottles, so what should you look for in a good rosé? It helps to keep in mind that rosé is a style of wine, like red or white, not a grape type. Typically, the grape skins are removed by the winemaker a few hours or days after fermentation begins, limit- ing the amount of red pigmentation bleeding into the grape juice. Rosé can be sweet, medium or dry depending on the type of grapes and the techniques of the winemaker. Rosé wines are typically bright and crisp, with red fruit flavours such as strawberry, cherry and raspberry, or flowerery, citrus, melon or herbaceuos. For dry rosés the most common grapes are grenache, sangiovese, syrah, mourvèdre, carignan, cinsault, and pinot noir, used alone to make a single varietal wine, or in combination. Sweeter rosés are often made using zinfandel, merlot or muscat grapes and techniques to reduce the red pigmentation, resulting in styles of wine known as “white zinfandel”, “white merlot” or “pink moscato”. Almost all rosé wines are intended for drinking within a year or two rather than ageing. While their light, refreshing character is especially appealing on warm summer days, rosés also pair well with most food and make a great aperitif. Another way to learn more about the variety of rosés available and which are best suited to your taste is to make your own.
