Source: a Madhuras recipe / YouTube Indian Pav Serves 6-8 Misal Pav is one of the most popular street food snack of Mumbai. Misal is a side spicy dish often made with sprouted moong beans / mixed sprouts. Misal is topped with (snack mix), chopped onions, coriander and dash of lemon juice. Its served with pan ().

Ingredients • 250 g (or 1 ½ cups) of moong beans sprouts / mixed sprouts. • 2 cups of water to cook the sprouts. • 4 Tbsp oil • ¼ cup – fresh grated coconut • 2 medium sized onions – roughly chopped • 4 to 5 garlic – roughly chopped • 1 inch ginger – roughly chopped • 1 tomato – chopped • 2 Tbsp – coriander powder • 2 Tbsp – garam masala powder • 2 Tbsp – Kashmiri red chili powder • 6 to 8 pav (Indian buns) • 3 to 4 cups of water • Ingredients (Garnish) • ¼ cup of chopped onions • 2 lemons • ¼ cup of coriander leaves • Farsan / Chivda (Misal snack mixture)

Instructions • Wash & soak moong beans or mixed sprouts in enough water for 6 hours. Drain & sprout them overnight. • Cook them with 2 ups of water on medium heat for 10 to 15 minutes till they are soft. • Take a pan and dry roast the coconut till its golden brown. • Remove the coconut from the pan and let it cool. • In the same pan, heat 2 tbsp. of oil and fry onions until golden. • Sauté garlic, ginger for a few minutes (4 minutes). • Continued on next page. Cook: Vanita Aksekar Snack Instructions • Add tomatoes and cook till the tomatoes turn completely pulpy and soft. • Turn off the flame and cool this mixture. • In a blender, blend the coconut and onion mixture to a fine paste. • Take a wok and heat 2 tbsp. of oil. Add the above paste and sauté for 2 to 3 minutes on medium flame. Add coriander powder, garam masala & Kashmiri chili powder and cook for another 3 to 4 minutes. • To this add the boiled sprouts; and add 3 to 4 cups of water. Let it cook on low flame for 20 minutes or till the oil starts to separate.

Instructions (Assembling) • First add the sprouts to the serving bowl. • Add the farsan (snacks mixture) over it. • Add onions & coriander. • Pour the over this. • Add a dash of lemon juice. • Serve with pav (Indian bread).
