Ever pumpkins-scarecrows-fall arrangements-great fall scents! since then man has enjoyed that fruit all over the world. Apples first came to North America in the 17th century via colonists. Now let me share a French recipe that is a huge favorite with our family. Apple Galette is a plain tart with a free form rolled crust. Pastry is elegant with simply sliced apples. A glaze may be added. Add ice cream. Umm - as good as or better than pie a la mode. Prep-20+20 min. Chill dough- 1 hr. Bake 1 hr. 15 min. Serves up to 10 generously. Pâte Brisée: 2 cups flour, 1½ sticks (6oz.) unsalted butter, ¼ tspn salt, ½ tspn sugar, 1/3 cup cold water. Cut the butter into the combined flour, salt and sugar until you have a coarse meal. Blend in water. Gather into a dough. Form a disk, wrap in plastic, chill Trick or Treat! for an hour. While dough chills, peel, quarter, and core 5 large apples. Slice each wedge into ¼ inch slices. Place these wedges in a plastic bag. Acidulate by adding at least one cup of water and 1 Tbsp lemon juice to stop discoloration of apples. Roll out the chilled dough on a well-floured board to cover a 13x15 baking sheet. Roll up on the rolling pin then roll back on the sheet. Dust with cinnamon sugar. Then arrange the apple slices in a large oval allowing at least 3 inches open to the edges as they will be folded over all the apples. Make smaller ovals inside the first adding all the slices. Dust with cinnamon sugar as you load the apples. Add thin slices of butter (1/4 stick) to top apples. Fold over the uncovered edges. Paint them with melted butter or a touch of egg substitute and sprinkle that 'paint' with a bit of sugar. It will brown for effect in a preheated 400 degree oven for up to 75 minutes. Glaze with apricot preserves thinned with Kirsch, Calvados or brandy then strained. Serve warm. Known as the Nutritious Gourmet, Jim Komar writes books and teaches cooking. If you are like me, I tend to gain more weight in the fall, as all these wonderful delights make me want to bake and then I have to taste test what I bake. So good luck with that one… I recently saw a cute idea I wanted to share with you. It was taking a wrought iron bowl rack that usually stands on the floor to hold your favorite bowls and turning it into a great front porch fall welcome. Instead of placing bowls in the rack, fill it with your favorite pumpkins. Another great way of using this is to fill it with those great corn stalks. Sometimes finding a place for stalks can be challenging. Check out the two photos that show this piece in those two ways. By Barbara Mills Lassonde Crafts, Antiques & Consignment Mall I-71 & State Route 38, London 740-426-6300 Labor Day was first celebrated in New York City on Tuesday, September 5, Sept 24 - Country Fall Open House Mall Hours 1882. It was planned by the Central Labor Union, which dedicated that day Oct 29 - Spooky Savings & More Tues-Sat 10-5 to celebrating the social and economic contributions of American workers. Closed Mon In 1884, it was changed to the first Monday in September, and was a Furniture Old & New, Antiques, Gifts, Jewelry “workingmen's holiday.” The idea spread throughout the country, mainly “Something for Everyone” Many NEW Made in America Crafts! through labor organizations, and in the years that followed, many states passed laws creating a Labor Day holiday. In 1894, Congress designated the first Monday in September a national holiday, Labor Day. To celebrate those early Labor Days, parades were held to demonstrate the strength of labor organizations. These parades were followed by festivals for the entertainment of the workers and their families. We think of Labor Day as the in the Fall! official end of summer- the end of lazy days at the lake, stinging sunburns at the seashore, horrible heat waves, droughts and countless hours toiling in the garden, trying to eke out a decent harvest. Summer gave us sunshine, for a listing of growing crops, unbearable weather conditions, destructive and annoying insects, lawns to mow, weeds to pull. Now it's time to bid farewell to all great festivals! things summer: barbecues, swimming lessons, family reunions, summer visitors, beautiful flower gardens. Summer is behind us and Labor Day is the beginning of the fall season. It's the return of kids and teachers to school, the promise of cooler weather, agricultural fairs, colorful foliage, goldenrod blossoms and allergies. Crisp, clear mornings greet us. We smell the spicy scent of autumn leaves crunching beneath our feet, watch flocks of migrating birds and hear the crack of a hunter's rifle echoing through the woods. It's the season of hurricanes, downed trees, flooding streams. It's time to winterize or store away the boat, pool, patio furniture, garden hose and insect repellent. All used in a flurry for such a brief time and now we're done with them for the next eight or nine months. We haul out the chain saw, leaf blower, jackets and window wash. We work around our job schedules and the weather to put our perennials to bed, clean up the vegetable garden and stack the firewood. This is the season to prepare for the long, cold winter ahead, when we're more confined to the house and fill our spare time with needlework projects, reading and cooking up new recipes. Besides honoring all of us who work, Labor Day is a time of transition from the freedom of summer to the chores of autumn packed into a few short weeks before the winter winds begin to blow.
