Reduce heat to low-medium and simmer for 20-30 minutes (until vegetables are tender). Slowly stir in cream or milk. 5) Carefully transfer this mixture into a blender. You might need to do this in batches. (I used an immersion blender so it can be done straight from the pot). Add a pinch of nutmeg and season with salt and pepper.
