1. Select a good Raclette AOP cheese from Valais which has matured for a minimum of 4-5 months.

2. Prepare the cheese by scraping the cheese smear (and not the rind) with the back of a knife or a scraper after having submersed it in 35°C water for 20 minutes.

3. Cut the cheese into two equal sections, ensuring that the cut is straight, clean and straight.

4. Choose a good quality grill (whether wood fired, gas or electric). 5. Select a good knife with a sharp blade for the rind and dip it into a pot of cold water before cutting each raclette.

6. Only place one half of the cheese beneath the grill at a time, even if it can accommodate two (the lateral heat risks damaging the second cheese half).

7. Maintain a distance between the heating element and the edge of the cheese – 2-3 cm for an electric grill and 3-4 cm for gas.

8. Scrape off the cheese from top to bottom using a sharp movement and hold the cheese at an angle of 45 degrees. Avoid applying too much pressure with the knife and keep your wrist relaxed.

9. Do not get distracted and remove the cheese from the grill if you need to take a break.

10. Rehydrate regularly. Sampling the local Valais Fendant wine is a must!

Visit a photography exhibition based around raclette during a playful stroll through the picturesque village of Bruson.
