Gin

Gin was first made in the Netherlands by a Dutch Professor, Fransiscus De La Boe, who was trying to create a wonder elixir and life giving drink, some say he succeeded!! All we know is it made it’s way to the United Kingdom by way of the British Army, who were found to be happier going into battle after a shot of “Dutch Courage!” It is made from blending alcohol with Juniper Berries and each producer uses their own secret ingredients

Gin Cocktails

Death’s Door Martini £7.00 Just Because it had to be done... a healthy helping of Death’s Door Gin, Noilly Prat Vermouth, stirred with ice, strained and finished with a lemon twist and olive!

Singapore Sling £6.00 One of thee great classic gin cocktails, Bombay Sapphire, Cherry , Grenadine, Pineapple Juice & Cream shaken and served long and tall!

Rum

Sugar Cane, the base ingredient in all rums was introduced to the Caribbean by Christopher Columbus in the early 16th Century, which was followed closely by the invention of Rum! To be legally called rum the spirit has to be aged for a minimum of 2 years in oak lined casks, previously used for Bourbon, then transferred into fresh for a further 6 months.. The first cut is known as White Rum, Gold Rum has caramel added to it, then aged for a minimum of two days and Dark Rum has the addition of Molasses or Treacle then aged for a minimum of two weeks

Bourbon &

Bourbon is a highly fertile area of Kentucky, named after the Bourbon Family, an old French Royal Bloodline, first distilled in 1789 by Elijah Craig, Bourbon is a non generic term and cannot be produced anywhere else in the world. Rye or American Whiskey has a minimum of 51% rye added to its mash and is usually filtered through charcoal, produced all over Canada and the South East USA There are also Irish, Welsh, English, Japanese and even some Spirits in Scotland, that fall under Whiskey rather than

Whisky & The Malt Range

Whisky, from the Gaellic Usige Breathe – Water of Life

Dates back as far as 1494, when it was first recorded by the English for Tax reasons, although history shows it being produced as far back as 1290! It was not, however, until the 19th Century that the highland distillers started to cooperate with Government on a commercial level and licensed stills and the different regions started to make their mark

There are two different types of Whisky in Scotland

MALT: Made using the old pot still process, distilling malter barley, has a stronger base and smokier aroma and taste The four distillation areas for malts are: Highlands, Islands, Lowlands and Cambletown.

GRAIN: Made using Malted barley and other cereals in the continuous patent Coffey still process, grain whisky unlike malt can be distilled anywhere.

The individual whisky can be sold as a single from individual distilleries, however the majority are used as part of the extensive selection of Scotland’s blended whisky’s of which there are well over 100, the best of which contain a greater proportion of malt to grain, providing it with a more distinct flavour. There are many different types, distilleries and each with their own unique flavours and characteristics, and our selection of Malts covers every region!

We have one Blended Whisky available behind our bar, as to have more than the one is a relatively pointless exercise as they are all very very similar and we feel there is more to the Malts!

The Famous Grouse £3.00 Finest malt whiskies, such as The Macallan and Highland Park, are married with exceptional grain whiskies for an unusually long period in fully seasoned oak casks. This creates a blend of the smoothest possible character.

The Malts

Defined as the product of one distillery, unblended due to the fact that most distillers believe their product too great to blend with others. Most malts are aged between 8 and 15 years although some are aged upto 50 years. Please do not be fooled by the common misconception, Malts do not continue to age and improve once bottled!

Our Selection.. and it is acceptable to have a splash of water or cube of ice, in fact it is encouraged as this releases a lot of the natural oils and flavours
