A little bit about TORO D.O.

Toro is a region that is a bit of a well kept secret. It is found along the banks of the river Duero, between the provinces of Zamora and Valladolid, comprised of 12 districts from the and 3 from Valladolid given its location in the extreme western area of the region of Castilla y León.

Toro is a Spanish Denominación de Origen (DO) created in 1987. The sandy soils of this DO protected many vines from the phylloxera crisis of the 19th century, which decimated most of the vines of Europe. (Phylloxera is pest which feeds on the roots of grapevines) As a result, Toro still has a number of very old vineyards with pre-phylloxera Tinta de Toro, which is the primary grape of this region.

Permitted varietals include Tinta de Toro/Tempranillo, Garnacha/Grenache, White Verdejo and Malavasia.

Although Tinta de Toro and Tempranillo are used by most interchangeably, Tinta de Toro is considered to be an acclimatized clone of Tempranillo, ampelographic characteristics are very similar to Tempranillo, as they have been estabilished in the area for several centuries, they have taken on their own name and personality.

Of the 19,800 acres (8,000 HA) planted in Toro, only 13,500 acres (5,600 HA) are allowed to be used in the production of these wines, responsible for 1200 growers. About half of the grapes used in the production of Toro (2,500HA) are still from pre-phylloxera rootstocks, with the residual vines grafted onto more resistant rootstocks.

The temperatures of this region vary greatly, ranging from 98.6°F (37°C) in the summer to 12°F (-11°C) in the winter. Temperatures can change drastically from day to night (diurnal temperature), varying from 98.6-68°F (37-20°C) in the summer. If not monitored carefully, the extreme heat can result in very high levels of alcohol. The DO allows up to 15% alcohol levels, but expect levels

around 13.5%. With these climatic extremes, extraction must be precise, otherwise the results are wines with overpowering tannins and super high alcohol content.

Wine Types

Joven: Wines that have not been aged in oak.

Crianza: To be able to use the “crianza” label on the back of the bottle, the wine should be ate least two years old, with at least six months of that time spent in oak barrels.

Reserva: To use the “Reserva” label on the bottle the wine must be at least three years old, having been submitted to a process of mixed ageing in oak basrrels and bottle. The wine must spend a minimun of 12 moths in oak barrels.

Gran Reserva: To use “Gran Reserva” label on the back of the bottle, the wine must be at least five years old, having been submitted to a process of mixed ageing in oak bsarrels and bottle. The wine must spend a minimun of twenty- four months in oak.

A little bit about the winery

Bodegas Campiña is a cooperative, but not a typical cooperative, only 19 viticultors compose the society. Their wish was to make wines with the vines that, in most of the cases, were planted by their grand fathers or their parents.

What then seemed a dream, a utopia, today is a reality that is reflected in winemaking facilities and the latest in technology. In 2005 the winery was built and one year later, the cooperative launched the first of its wines, an unoaked wine called Campiña 2005.

Rosa Maria Zarza was the person selected to make their wines and to control the vineyard. An experienced winemaker that makes wines in different appellations all around but, it was in this region, in Toro, where she made her first wine.

They own 200 hectares of vineyard in different districts in the appellation: Toro, Venialbo, , , La Bóveda de Toro, San Román de la Hornija, Villafranca del Duero y . They only make wines with their grapes. 40% of the vines are, at least, 80 years old and neither of their vines are younger than 20 years. Depending on the year conditions, they collect a maximum of 500.000 kg and they make a maximum of 450.000 bottles.

Appellation: D.O. Toro. Toro appellation is in the North West area of Spain,it is crossed by Duero River. The main variety is Tinta de Toro, a clon from Tempranillo. There is a high percentage of prefiloxeric vineyards, filoxera didn’t arrive because of their sandy soils. Toro wines are powerful and high in alcohol, often with a distinctly roasted, meaty character.

Winemaking details: Criomaceration for 24 hours. Alcoholic fermentation at controlled temperature in stainless steel vats. Maceration post alcoholic fermentation. Malolactic in stainless still. Not clarified neither filtered.

Tasting: Exhibit intense cherry red colour, crimson, with hints of blue and violet. Ripe fruit, blackberry and raspberry aromas stand out. Full in the mouth, maintaining total harmony between all of its components, fruity, fleshy, glycerc and tannic, persistent. A wine long on the palate.

Food match: red and white meat, pasta, ham and cheeses

Ageing Potential: 5 years maximum

With fund balsamic and roasted in the background provided by the French oak. The palate shows a good balance. Elegant fleshy perfect assembly between the tannins ripe fruit and wood

Food Match: Ideal to go with roasted, red flesh and hunt, cheeses, pâtés and tablespoon stews.
