WO 2013/034911 PCT/GB2012/052192 1 PRODUCTS AND METHODS TECHNICAL FIELD OF THE INVENTION The present invention relates to nutritional, cosmetic, preventive and therapeutic 5 applications of food fungi, fermentation products and extracts thereof. The invention relates in particular to lowering elevated cholesterol and/or triglycerides levels, as well as to treating or preventing infection, inflammation, inflammatory damage, atherosclerosis, heart disease, stomach, intestinal and liver inflammatory conditions and their complications, and to promoting or stimulating regeneration or healing of wounds, 10 bums, ulcers, or other forms of damaged or aged tissues. BACKGROUND OF THE INVENTION Chronic inflammatory processes in the liver and adipose tissues result in lipid abnormalities and Metabolic Syndromes. Chronic inflammation in other tissues also has 15 a number of clinical implications including atherosclerosis, cardio-vascular disease, obesity, diabetes type 2, cancer, sarcopenia, gastritis, stomach or duodenum ulcers, arthritis, dermatological diseases and aging of skin and other organs. There are a number of reports associating the development of those conditions with the presence of Chlamydia infection. Mechanisms for how Chlamydia infection can reach the liver, 20 alter lipid metabolism and trigger oxidative cascades have recently been reported [5-10]. Cytokines and in particular interleukins, lymphokines, and interferons are important in controlling inflammatory reactions and the infection process. 25 Inflammatory oxidative damage can result from bacterial infection, or autoantibodies, or the presence of other toxic factors, or when inflammation reaches a critical level. Damage to the cell membrane can result in the release of cell contents into the extracellular environment. The cell contents can include proteases, other degradation enzymes and acidic intracellular components. The release of the cellular contents into 30 the extracellular environment can result in further damage to cell membranes and the intracellular matrix. Moreover, the acidic shift in local pH can alter the peroxidase WO 2013/034911 PCT/GB2012/052192 2 activity of superoxide dismutases and other proteins with similar structural and catalytic properties [3-4]. Conditions involving inflammation and inflammatory damage are of ever increasing 5 importance. Levels of heart disease and diabetes are steadily increasing, driven, in part by high levels of obesity. SUMMARY OF INVENTION The inventors have discovered that food fungi and their fermentation products have a 10 range of previously uncharacterized and beneficial biological properties, including anti infective, anti-inflammatory, and anti-oxidative properties, as well as being able to stimulate tissue regeneration. The effect is seen in particular with fungi used in the production of blue and white fungal fermented cheese or other foodstuffs using such fungi. 15 Compositions described herein may, for example, reduce or inhibit infection, inflammation or oxidation, including inflammatory oxidative damage, in the individual or reduce or inhibit the onset, duration or severity of one or more symptoms associated with infection, inflammation or oxidation in the individual or reduce the risk of the 20 individual suffering from infection, inflammation or oxidation or one or more symptoms associated therewith. The compositions may be used to lower cholesterol and hence help reduce the incidence, or delay the onset of, heart disease, as well as helping promote recovery in heart disease, particularly after a heart attack. The invention may be used in particular to lower elevated cholesterol levels and/or triglyceride levels in an 25 individual. In one preferred instance, the invention may be used to lower or reduce cholesteterol and/or triglycerides and in particular to lower elevated cholesterol and/or triglycerides levels, including in subjects known to have atherosclerosis and/or heart disease, but also 30 healthy subjects. Given cheese is perceived as a high fat food, such a finding is unexpected. The compositions and methods of the invention may also be used to prevent, reduce or treat infection. WO 2013/034911 PCT/GB2012/052192 3 Hence, the invention provides for use in prevention or treatment of infection, inflammation, inflammatory damage, oxidative damage, atherosclerosis, heart disease, a stomach, intestinal or liver inflammatory condition or complication thereof, promoting 5 or stimulating regeneration or healing or in reducing elevated cholesterol and/or triglycerides levels. Accordingly, the present invention provides a composition comprising: (i) a population of cells and/or spores of a food fungus; 10 (ii) a food matrix comprising a population of cells and/or spores of a food fungus; and/or (iii) an extract, fermentation product or metabolite of (i) or (ii), for use in the prevention or treatment of infection, inflammation, inflammatory damage, oxidative damage, atherosclerosis, heart disease, a stomach, intestinal or liver 15 inflammatory condition or complication thereof, promoting or stimulating regeneration or healing or in reducing elevated cholesterol and/or triglycerides levels. The invention further provides for use of a composition comprising: (i) a population of cells and/or spores of a food fungus; (ii) a food matrix comprising a population of cells 20 and/or spores of a food fungus;

Some say it was first made in the town of Gorgonzola situated just outside Milan, in the year 879. Others believe it was created in the dairy centre, Pasturo, in the Valsassina, where the natural caves provided the perfect conditions for the maturing of the cheese. Either way, it is known that the cheese was produced in the Autumn using the milk of the 'tired' cows who were returning from the mountain pastures of the Italian Alpine region where they had spent the hottest months. The cheese was first called Stracchino di Gorgonzola, which soon became shortened. Gorgonzola is a protected cheese. It has had a Protected Designation of Origin (PDO) since 1996 which regulates many aspects of the cheese's production, including where the milk comes from, where it is produced and where it is matured. This serves to ensure the authenticity and quality of the product and can be verified by the consumer by the presence of a stylised 'g' on the foil used to wrap the cheese. The cheese is made with pure, high quality milk that has been heat treated, and poured into vats at a temperature of approximately 30 degrees.

The aim of this study was to study the richness of ascomycetes in a set of soil samples from Mexico and Spain. Fungi were isolated after 2% w/v phenol treatment of samples. In that way, several strains of the genus Penicillium were recovered. A phylogenetic analysis based on internal transcribed spacer (ITS), beta-tubulin (BenA), calmodulin (CaM), and RNA polymerase II subunit 2 gene (rpb2) sequences showed that four of these strains had not been described before. Penicillium melanosporum produces monoverticillate conidiophores and brownish conidia covered by an ornate brown sheath. Penicillium michoacanense and Penicillium siccitolerans produce sclerotia, and their asexual morph is similar to species in the section Aspergilloides (despite all of them pertaining to section Lanata-Divaricata). P. michoacanense differs from P. siccitol- erans in having thick-walled peridial cells (thin-walled in P. siccitolerans). Penicillium sexuale differs from Penicillium cryptum in the section Crypta because it does not produce an asexual morph. Its ascostromata have a peridium composed of thick-walled polygonal cells, and its ascospores are broadly lenticular with two equatorial ridges widely separated by a furrow. All four new species are xerophilic.

His work lay unknown for fifty years, but on being brought to light led to his being credited with having discovered penicillin prior to Alexander Fleming. The claims surrounding Duchesne are examined here both from the strictly microbiological perspective, and also for what they reveal about how the process of discovery is frequently misconstrued. The combined weight of evidence presented here militates strongly against the possibility that the species of Penicillium that Duchesne worked with produced penicillin.     THE MOULD OF THE BLUE-VEINED CHEESES DAN W. STEUART Uniwrsity College, Cardiff Certain cheeses, much prized by the public, are eharacterised by a blue or green marbling, due to which they are classed as the blue-veined cheeses. They include such well-known varieties of cheese as the French ewes-milk Roquefort, the Italian Gor- gonzola, the English Stilton, Wensleydale and blue-Dorset, and the less commonly known Welsh blue-Caerphiny. The marbling is caused by the growth of a mould usually still referred to in this country as Penicillium glaucum; but this name is too general as it embraces several distinct varieties of Peni- cilli-m mould. Charles Thorn in America made an extensive study of the French Roquefort cheese and always found present in it a more or less pure culture of a specific mould which he termed Peni- cillium roqueforti. Even though many other species may be present in the original milk no other blue mould is likely to develop much in a well-made Roquefort cheese, due to the low oxygen content of the gas in the spaces of the cheese; 2.4 per cent to 7 per cent according to Thorn and Currie. Of the species of Aspergillus and Penicillium studied the Roquefort mould was the only one capable of producing fairly strong colonies in air containing only 5 per cent of free oxygen. Owing to the great bacterial activity of the freshly "made cheese the oxygen of the spaces may fall below 5 per cent; and even P. roqueforti refuses to grow in an oxygen-less atmosphere.

Some species are opportunistic pathogens, while others are exploited in biotechnology for the production of enzymes, antibiotics and other products. Penicillium belongs phylogenetically to Trichocomaceae and more than 250 species are currently accepted in this genus. In this study, we investigated the relationship of Penicillium to other genera of Trichocomaceae and studied in detail the phylogeny of the genus itself. In order to study these relationships, partial RPB1, RPB2 (RNA polymerase II genes), Tsr1 (putative ribosome biogenesis protein) and Cct8 (putative chaperonin complex component TCP-1) gene sequences were obtained. The Trichocomaceae are divided in three separate families: Aspergillaceae, Thermoascaceae and Trichocomaceae. The Aspergillaceae are characterised by the formation flask-shaped or cylindrical phialides, asci produced inside cleistothecia or surrounded by Hülle cells and mainly ascospores with a furrow or slit, while the Trichocomaceae are defined by the formation of lanceolate phialides, asci borne within a tuft or layer of loose hyphae and ascospores lacking a slit.

The taxonomy of Penicillium species from fermented cheeses. Antonie van Leeuwenhoek 43: 341-350. The taxonomy of the Penicillium camernberti and P. roqueforti series is re-investigated. P. caseicolum Bainier is regarded as a synonym ofP. camemberti Thorn on the basis of morphological characters. P. casei Staub is considered to be identical with P. verrucosum Dierckx var. cyclopium (Westting) Samson, Stolk et Hadlok. Descriptions and illustrations of P. camernberti and P. roqueforti Thorn are given. The occurrence and mycotoxin production of both species are shortly discussed. INTRODUCTION Members of the genus Penicillium are commonly found in food products. Several species are known to cause spoilage (e.g.P. digitatum Sacc. and P. expansum Link ex S. F. Gray) or to produce toxic substances (e.g.P. gri- seofulvum Dierckx and P. rubrum Stoll). Some other species like P. roqueforti and P.camemberti have long been used in the production of such cheeses as Roquefort, Gorgonzola, Camembert and Brie. As early as the turn of the century Johan-Olsen (= Sopp) (1898), Dierckx (1901) and Thorn (1906) and others reported on these fungi, especially dealing with their occurrence on cheese and the role in the fermentation process. In current food microbiology the Penicillium species which are used as fungal starters for the production of different types of cheese have become of special interest because of their possible toxic metabolites (Gibel, Wegner and Wildner, 1971 ; Frank, 1973 ; Anon., 1974).
