1 lb. hamburger meat 4 med. onions, diced/chopped 4 tbsp. yellow 3 tsp. sugar 2 tsp. apple cider vinegarr 2 tsp. chili powder 1 cup ketchup salt, to season

1. Break up the hamburger meat and put into a 4-qt. pan. Add enough hot water to make a thick mix. Stir until smooth. 2. Add the remaining ingredients. Cook slowly for 1 hour. Can be thinned as needed with water or beer.

Yields 12 servings

1 pound ground beef 1 cup lard 1 medium onion, diced 1/3 cup chili powder 2 teaspoons paprika 1 teaspoon black pepper, coarsely ground 1 teaspoon garlic powder 1 teaspoon cumin powder 1 teaspoon allspice 1 teaspoon basil, dried 1 teaspoon salt ½ teaspoon oregano, dried

1. To get the right consistency, cover the meat with water and soak, in the fridge, for about 30 minutes. Then take a fork and break up any remaining chunks. Drain the water and go on to browning. You will have some water while browning but it will slowly steam off. 2. Brown beef, onion and shortening. 3. Add remaining ingredients. 4. Simmer for 2 hours. You may have to add some water.

NOTE: This freezes well.

3 to 4 tablespoons vegetable oil 2 lbs ground beef (or use half ground pork) 2 medium garlic cloves, finely minced ¼ cup tomato paste 1 onion, finely chopped 2 cups beef broth 5 tbsp. chili powder 6 tbsp. corn meal or masa harina 2 tsp. sugar 2 tsp. salt 1 tsp. ground cumin 1 bay leaf

Heat oil and sauté garlic and onion until light golden, about 7 to 9 minutes. Add chili powder, sugar, and cumin. Continue cooking, stirring constantly, for 2 minutes. Add ground beef and cook, stirring, until evenly browned. Stir in remaining ingredients; reduce heat to low and simmer until very thick, 15 to 20 minutes. Discard bay leaf.

Yields about 20 servings of hot dog chili on chili dogs

"When you are topping a hot dog or hamburger with chili sauce, it is vital that the consistency be uniform, no meat chunks allowed. This method is traditional among the nation's hot dog chefs and they are avid about the beef having to be nearly pulverized. If you cannot grind your own, see if you can have a butcher make an extra-fine grind for this recipe."

2 garlic cloves, minced ½ cup onion, chop fine 2 tablespoons vegetable oil 1 lb. lean ground beef 1 teaspoon salt ½ teaspoon ground black pepper 1 tablespoon yellow mustard 1 tablespoon vinegar 1 teaspoon Worcestershire sauce ½ teaspoon Tabasco®, or to taste ¼ cup ketchup ½ to 1 cup tomato juice

1. In a large heavy skillet cook garlic and onion in oil over moderate heat, stirring, until onion is softened. 2. Add beef and cook, stirring and breaking up any lumps with a fork, until cooked through. Drain off any excess fat if desired. 3. Add remaining ingredients, adding just enough juice to create a very loose but not soupy mixture. Simmer sauce, stirring occasionally, 10 minutes.

Yields enough to top 6 hot dogs

I hope to make the first one sometime toward the end of the month. I've had variations on the the second one and have made similar sauces in the past, but not that exact one. Actually I might try that one soon, too, but maybe with the addition of some celery seed/salt and some more cumin. I'm still trying to locate one that I have not transcribed yet...it is a loose meat type of chili served in a hot dog joint (Nu Way) in Macon, Georgia. I like the meat in all of my hot dog chili to be almost pulverized.

 3 lbs ground beef  1 cup finely chopped onions  5 cloves garlic  1/4 cup vegetable oil  3 cups tomato puree  1 1/2 tsp cumin seed  1 tsp ground coriander seed  4 jalapeno peppers  4 cubanelle peppers  1 tsp black pepper  1 tsp salt  1 1/2 tsp oregano  3 tbs chili powder

[SIZE=6]Directions[/SIZE]

1. To Prepare the peppers: Cut peppers in half & scoop out the seeds. 2. Steam peppers in 1" of water for 15 minutes, then scoop out the pulp. 3. To Make the Chili: Brown beef with onions & garlic in a large pot. 4. Add all other ingredients 5. Cover & simmer 3+ hours, stirring occasionally

I left out a crictical note on one recipe

I don't know how, but I left out a critical note one one of the recipes for hot dog chili sauce I posted a few days back. The recipe as originally posted follows this correction.

Please add the following note to the recipe:

NOTE: Surprisingly this recipe contains no chili powder! The Varsity DEFINITELY uses lots of chili powder in their product. It is suggested that 2 tablespoons of chili powder and maybe some cumin and paprika to taste be added.
