Gold Coast Beach Parade raises $20,500 for koalas

MORE THAN 950 PEOPLE REGISTERED FOR THE GEMLIFE GOLD COAST BEACH PARADE AT BURLEIGH LAST MONTH, RAISING $20,500 FOR THE CURRUMBIN WILDLIFE HOSPITAL FOUNDATION.

GemLife was the proud naming sponsor of the parade, a special community event that celebrated Gold Coast’s famous beach culture while raising important funds for Currumbin Wildlife Hospital to care for koalas and other native wildlife. The fun, colourful event was attended by people of all ages, including well-known celebrities, actor Lincoln Lewis, actress and TV host Lynn Gilmartin and surfer Joel Parkinson, to set a record for the largest number of participants wearing -ear visors in beachwear while completing the three-kilometre parade route. GemLife General Manager Ben Livingstone said he and his family were proud to be part of an event that helped koalas, one of Australia’s most beloved and iconic animals. “The money raised will help Currumbin Wildlife Hospital rescue, rehabilitate and release koalas back into the wild, which isn’t cheap to do. It costs approximately $7000 to rehabilitate a koala and release them back into the wild, so support from the wider community is really important,” he said. Currumbin Wildlife Hospital treats more than 600 koalas in a year and is struggling for funding. Currumbin Wildlife Hospital Senior veterinarian Michael Pyne said every dollar helped. “We can get caught up in what we do and its lovely to see the community doing what they can and supporting us,” he said.

An Italian winter classic

WINTER HAS OFFICIALLY ARRIVED AND THE HEARTY AND EASY TO PREPARE ITALIAN FAVOURITE, OSSO BUCO, IS ONE OF THE SEASON’S BEST DISHES. GEMLIFE CHEF MATT CONQUEST SHARES HIS FAVOURITE TAKE ON THIS CLASSIC DISH, PERFECT FOR THOSE LOOKING FOR A WARMING MEAL ON A COLD WINTER’S NIGHT.

Matt’s Osso Buco | SERVES 4 Osso buco is a beautiful, simple Italian classic. Tender fall-off-the-bone beef, served with smooth polenta with fresh and zesty gremolata, really brings this dish to life. This recipe is perfect for braising in your Smeg oven. The beef can be substituted with lamb shanks if preferred.

INGREDIENTS METHOD 1 tablespoon olive oil 1. Set Smeg oven to fan-forced and pre-heat to 180⁰C. 1.4kg beef osso buco or 1kg gravy beef, sliced 2. Heat olive oil in a large, ovenproof baking pot over high heat. Add beef and cook until brown on all 1 onion, finely chopped sides. 1 carrot, finely chopped 3. Add onion, carrot, celery, tomato, thyme, and garlic 1 celery, finely chopped and cook for a few minutes until the vegetables 1 tomato, skinned and diced soften. Add wine, bring to the boil and simmer for a few minutes until reduced by half. Add stock, 1 small bunch thyme season to taste with salt and pepper, return to the 2 garlic cloves, finely chopped boil, cover, and place in your oven. 100ml white wine 4. Cook for 1 hour 30 minutes, remove lid, and cook 500ml beef stock for a further 15 minutes until the beef is very tender. For a thicker sauce, remove meat from the Sea salt & cracked black pepper baking dish and set aside. Place baking dish on Parmesan polenta the cooktop and simmer for 5 to 10 minutes until 500ml (2 cups) milk reduced. Return meat to sauce. ½ cup instant fine polenta 5. Polenta: Bring milk to a simmer in a medium saucepan. Add polenta slowly, whisking until 50g finely grated parmesan smooth. Continue to cook for 5 minutes until 50g butter smooth, stirring frequently. Stir through cheese and Gremolata butter and season to taste with salt and pepper. 3 tablespoons finely chopped parsley 6. Gremolata: Combine all ingredients. 7. Serve polenta topped with beef, then sprinkle with 1 lemon, zested gremolata. 1 garlic clove finely grated 8. Serve with crusty baked bread.
