If you like you can also bake the beef carpaccio tomatoes with salsa in the oven for a few minutes and eat with scrambled eggs on toast. (Serves 4) Recipe by Chef Sune Niemand

Ingredients: 400g Beef tomatoes, sliced 2mm thick Salt and olive oil for seasoning

Ingredients for the Salsa: 3cm Piece of ginger, chopped and crushed 2 Spring onions, very finely sliced 2,5ml Flaked sea salt ¼ Green chilli, deseeded and finely chopped 25ml Finely chopped coriander 50ml Sunflower oil 5ml Red wine vinegar

Method: To make the salsa, mix the ginger, spring onion, salt, chilli and coriander together Heat the oil until just warm and pour over the salsa mix. Lastly add the red wine vinegar, stir together and set aside.

Arrange the tomato slices on a large platter, slightly overlapping each other. Season with some ﬂaked salt and a drizzle of red wine vinegar. Spoon the ginger and spring onion salsa evenly over the tomatoes and ﬁnish with some olive oil.
