Beaumont Inn’s Famous Corn Pudding (Harrodsburg)

[ 2 C white whole kernel corn or fresh corn cut off the cob, 4 eggs, 8 level T flour, 1 quart milk, 4 rounded tsps. sugar, 4 T butter-melted, 1 tsp. salt ]

Stir into the corn, the flour, salt, sugar, & butter. Beat the eggs well; put them into the milk, then stir into the corn & put into a pan or Pyrex dish. Bake in oven at 450 degrees for about 40-45 minutes. Stir vigorously with long prong fork three times, approxi- mately 10 minutes apart while baking, disturbing the top as little as possible.

Boone Tavern Cranberry Beets Recipe (Berea)

[ 1 C sugar, 1 C water, 2 C raw cranberries, 1 tsp. corn starch, 1 T cold water, 1 (14-16 oz.) can cubed beets (or 2 cans small whole)

Mix water & sugar. Boil 5 minutes. Add washed cranberries & cook without stirring until berries pop open. Drain juice from cranberries. Return juice to heat. Mix cornstarch with cold water & add to juice. Cook until clear & thickened. (About 3 or 4 minutes). Add berries & drained beats to thickened juice. Heat until all are hot. Hot or cold, these beets have a delicious flavor.

Old Talbott Tavern Pie (Bardstown)

[ 3/4 C sugar, 1/2 C flour, 1/4 tsp. salt, 1 1/4 C water, 2 egg yolks, 1/2 C orange juice, 1 T grated orange rind, 2 T lemon juice-fresh, frozen or canned ]

MERINGUE: 2 egg whites, 1/2 C sugar, 2 T water

While pie shell bakes, mix sugar, flour, salt in top of double boiler. Stir in water smoothly & cook over direct heat for 5 minutes. Stir constantly. Beat egg yolks slightly, mix with filling gradually & cook over boiling water about 5 minutes longer or until very thick. Remove from heat, add both fruit juices & orange rind. Chill & pour into cool baked pie shell. TO MAKE MERINGUE: Mix egg whites, sugar, water in top of double boiler. Beat with rotary beater until thoroughly mixed, place over boiling water & cook 1 minute, beating constantly. Remove from heat & continue beating until meringue stands in peaks. Pile over pie filling lightly & decorate with orange sections & coconut, if you like.

The Legendary Christmas Pickle

The Legend of the pickle is like many legends - only as good as the story teller's who share it. Take time to enjoy the legend (s) and start your own family legends with a Christmas Pickle on your tree.

The Legend of the Pickle -

The Christmas pickle is not really a pickle at all, it is a pickle shaped ornament. A very old tradition in was to hide a pickle ( ornament ) deep in the branches of the family Lilly Rosa Bordeaux Merlot Jack Christmas Tree. The parents hung the pickle last after all the other ornaments were in place. In the morning they knew the most observant child would receive an extra gift from St Nicholas. The first adult who finds the pickle traditionally gets good luck for the whole year. This Christmas pickle story, with a few minor variations, can be found all over the web and in print inside the glass ornament package. It says that Germans hang a pickle-shaped glass ornament on the Christmas tree hidden away so it's difficult to find. The first child to find it on Christmas morning gets a special treat or extra present. In retrospect the real essence behind this family tradition is to take time to savor the moment with family and friends and while searching for the pickle enjoy the beauty of the tree and its ornaments - teaching children to stop and enjoy the beauty of the season and not focus on the gifts under the tree.

Or so one of the legend goes...

A second version begins with a family story of a Bavarian-born ancestor who fought in the American Civil War. A prisoner in poor health and starving, he begged a guard for just one pickle before he died. The guard took pity on him and found a pickle for him. The pickle by the grace of God gave him the physical and mental strength to live on. A yet another version began in Berrien Springs, MI, and is a medieval tale of two Spanish boys traveling home from boarding school for the holidays. When they stopped at an inn for the night, the innkeeper, a mean and evil man, stuffed the boys into a pickle barrel. That evening , St Nicholas stopped at the same inn, realized the boys plight and tapped the pickle barrel with his staff, magically freeing the trapped boys. Berrien Springs calls itself the Christmas Pickle Capital of the World. They celebrate with an annual Christmas Pickle Festival which takes place in the early part of December. The highlight of the parade is the Grand "Dill" meister who passes out fresh pickles along the parade route. You may even purchase the German glass pickle ornaments at the towns museum. Rumor and speculation place the origin of the tradition in Germany, however few in modern day Germany recognize or have even heard of the Christmas pickle. Regardless of where it came from, the Christmas tradition survives and is a fun and great family tradition worth sharing. This Week: Ashford Acres ~ The Owen Home Revisited

In August, 2009, I had the distinct pleasure of visiting Mr. Jack Owen at his lovely home on Millersburg Pike. I was working on updates to the homes featured in This Old House by Katherine Wilson. The following was written for The Owen House in 2009: In 1858, John Williams built this stately home as a wedding present for his son, John Williams Jr. & his bride to be. However, the evening before the wedding, an argument ensued during the rehearsal dinner at the home & the wedding was cancelled. His daugh- ter & son in law, Sheriff & Mrs. R. T. Lindsey moved into the home & remained there until 1865, when the John Musselman family purchased the home. Following the Musselmans, the Henry Cox family occupied the home from 1871 until 1899. Cox; a cabinet maker, grocer, & welll to do farmer, once was the largest landowner in Harrison Co. Several owners followed the Coxes: H. D. Hickman family (1899-1905), Mrs. Ellen Cleveland (1905-1914), W. A. Small (1914-17), W. T. Hamon (1917-18), & the H. D. Florence family who resided here from 1918-41. Miss Katherine Wilson wrote, "In 1941, Mr. & Mrs. Sterling P. Owen Jr. bought the place. They painted it white, added the front pillars, tore down two frame rooms in the rear, made the enclosed porch into the dining room, built the arched side porch & laid brick floors in all the porches." An arched doorway in the dining room is a duplicate of the builder, John Williams' home, which was copied from the original by Will Humphrey. Is it still standing? Yes. Nestled amongst the beautiful trees, this grand old home located 1 1/2 miles out of Cynthiana on Millersburg Pike has maintained the integrity of years gone by. From the original ash floors to the intricate moldings, the details of the home's original construction are still prevalent. The home has served host to many weddings & social events over the last 150 years. During a recent visit, homeowner, Mr. Jack Owen showed me the spot where Union soldiers had shot a cannon ball into the home during the Civil War. General Jack Owen made reference to his own modern day security system at the home...doubtful he is someone the Union soldiers would want to encounter today!! Update: After General Owen's death, the 64 acre historic estate was purchased by sisters Sonia Kirkman & Annastasia Hicks, both Cynthiana natives, in June 2015. Together they created a vision of what they wanted Ashford Acres Inn to become and immediately began renovations. Once renovations are complete the bed and breakfast will have four guest suites in the main house, including one two-bedroom suite, & a detached honeymoon suite in the garden. All guest suites have en suite bathrooms. Overnight guests will receive a full breakfast at The General‟s Table, or can opt for a breakfast basket brought to their room. The bed & breakfast will also serve as a venue for weddings & other events in the dining room or in the sprawling garden around the house.
