After our hike we wanted an appetizer to go with wine and we stopped into the familiar Greensprings café, hopeful we’d find a cheese plate to go with some red wine. The first item on the menu was flat bread with roasted garlic and cheese and this was the beginning of an experience that was simply amazing and delightful.

We sat on the deck and enjoyed the afternoon warmth. In short order, our flat bread arrived, freshly grilled with basil and melted cheese and a nice hunk of Cambozola along with perfectly tasty roasted garlic. Absolutely amazing!

Our next taste sensation was the crab and mel- on salad. This is a mixture of Dungeness crab, Vietnamese fish sauce, cilantro, jalapenos in the center, surrounded by watermelon and cantaloupe. This dish is stunning. The complex flavors and unex- pected melding of sweet and sour, spicy and salty are truly first class.

From there we went on to try the Camarones Diablo- a spicy shrimp appetizer that was our second favor- ite, the Chop salad: Romaine lettuce, candied pecans, avocado, bleu cheese, bacon and apples. This salad alone is worth the trip (although I’ll be heading up there again very soon for the crab!), the flavors work perfectly together and it is all quite balanced.

To finish, I tried the Prime Rib, but was too full by then to do it justice but the au jus and the horserad- ish was perfect.

Our room was just what we needed: a simple clean room with no TV or phone, just a coffee maker with good (Allan Brother’s) coffee and refrigerator that came in handy for my leftover prime rib. Located on the backside of our room was an outdoor room with blinds for privacy and a big spa tub for soaking and watching the evening fall in the mountains.
