The specific origins of the krama are unclear, but it is believed that Khmer people have been making and wearing these garments from as early as the 1st century, with stone statues from this period depicting Gods wrapped in them. Collecting, preparing, and weaving the material was – and remains – a task generally done by women, and these skills have traditionally passed down the generations through female members of families.

Krama scarves can be woven from either cotton or silk, both of which have been grown and harvested throughout Cambodia for many years. Cotton kramas are popular for every-day use as they easier to make and handle, inexpensive, and can be either coarse or soft depending on the quality of the fibres. High quality silk kramas are also finely woven to be worn for special events, and are often trimmed in Cambodia’s distinctive naturally golden silk.

Kramas are recognisable for their tight check pattern, which is traditionally woven from red and white, blue and white, or black and white threads. However natural dyes have been used for centuries to create other muted hues, such as green, orange and pink, and many provinces have a particular preferred colour palette.

The town is synonymous with these precious corns, considered the best in the world by spice connoisseurs for their strong yet refined aroma and faintly sweet, eucalyptus notes which linger enticingly on the palate.

“Pepper has been cultivated in Cambodia for over 700 years,” according to Ngoun Lay, president of Kampot Pepper Promotion Association (KPPA) – pre-dating even the civilisation of Angkor. “The techniques have passed down, learned from children watching their parents.”

‘Pepper Fever’ took hold in the late 1800s when it was discovered by Photo: Matyas Rehak European sailors and merchants via Kampot’s important seaport. Before long, French chefs were clamouring to purchase this unsung spice hero, and no Paris restaurant would serve anything else. So revered was the pepper that it became known as ‘black gold’.

What makes Kampot pepper so special? “The soil quality and the geographic location of the area,” says Chan Samen, deputy provincial governor for neighbouring , who hails from generations of pepper farmers. Proximity to the Gulf of Thailand and the Elephant mountain chain provides the perfect terroir of mineral-rich soil, salt-laden air and high rainfall to bear the highly prized fruit.

In 2010, Kampot pepper was awarded World Trade Organisation-backed Geographical Indication (GI) status, with the European Union also issuing GI status in February last year, and Thailand following suit a few months ago. The distinction certifies that produce attains all distinguishing qualities and utilises non-chemical fertilisers to enjoy the reputation of its geographical origin. The GI branding covers an area exclusive to five of Kampot’s eight districts, with one further district in Kep that has identical soil and weather conditions. In short, Kampot pepper is the champagne of spices.

34 Arun in-flight magazine July - October 2017 GI status has returned Kampot pepper to notoriety. “Buyers around the world are recognizing the quality of our pepper more and more,” says Lay. The KPPA has 242 independent farmers and 17 companies, both local and international, which endeavour to satisfy burgeoning demand for the black gold. The pepper comes in four varieties: black, red, white and green. Black peppercorns, the most popular, impart a complex, herbaceous flavour with characteristic musky heat. It’s a key ingredient in local dishes such as the Chinese-inspired noodle soup kuy teav, the meaty stir-fry supremo chha kh’nhei, or the beef lok lak, Cambodia’s answer to French classic steak au poivre. Full-bodied, sweeter, and with less heat than their black counterparts, red peppercorns are used to season anything from red meats to desserts, such as the ice cream and goat cheese mousse at New York’s outstanding Le Bernardin restaurant. White peppercorns are achieved by blanching red peppercorns to remove the skin, which softens their heat. Plucked from the vine at full maturity, these pungent fruits are rare and highly sought-after. Green pepper, renowned for its delicate citrus notes, is still unripe when harvested and should be enjoyed within four days. This dish is a must, best enjoyed at Kep’s seafront restaurants – order and sit back to witness fishermen retrieve your crabs fresh out of cages in the surf. Teahouses were once an extremely common sight in Chengdu, with one on almost every street. Before the advent of the TV and radio, they were where you first heard the news. Since China’s development drive in the 1990s, however, their number has reduced considerably. With big chains like Starbucks making an entry, the reign of teahouses – and the easygoing Chengdu way of life – is increasingly challenged. Already, most teahouses have moved to major public parks and precincts of Buddhist monasteries and Taoist temples. It is in these big public spaces that tea culture

Typically, tea is served in a gaiwan cha or “tea boat”. This tea set, common in Sichuan, comprises lidded teacups on saucers, resembling floating boats. The saucers prevent direct contact with the

Afternoons are busy hours at teahouses, when servers, or “tea doctors”, are rushed off their feet, topping up water from their copper kettles, the long spouts stirring up the tea leaves settled at the bottom of the cups. Besides lashings of tea, the tea doctors serve abundant entertainment with their mastery over their kettles. Some have even been known to pour water into teacups from across the room. And if that’s too dramatic, you could always unwind with some comedic opera, or pamper yourself with a massage, eyebrow pluck, or ear clean, or get your shoes shined.

How to get to town Phnom Penh International Airport is not far from the downtown area, but getting to your hotel can take between 30 minutes to an hour depending on traffic and the time of day. Registered taxis are ready to pick you up curbside and charge a flat rate of $15 to most locations. Taxis are a great option as the road can be bumpy and dusty, and at certain times of year, quite hot. For travellers looking to save money, just walk to the airport’s gate to find a fleet of tuk-tuks that cost around $7 a trip, but be sure to bargain before you get in because they may ask for more. Hotels can also arrange for airport pickup by private car. Amenities The airport has recently undergone a $100 million expansion, bringing in a new food court and many new stores, with some yet to be completed. Many amenities are still on offer, though. Weary travellers can rest up at Amata Massage, which offers back and foot massages, while business class passengers can head to the airport’s new VIP and Premium lounges for a relaxing interlude before their flight.

Shopping options continue to grow, but Monument Books has been an airport staple since 1998, offering the latest titles in English, French and a selection other languages. Shoppers can hit up Dufry Cambodia for duty-free luxury items, while boutique shops offer traditional Khmer scarves and souvenirs as well as contemporary fashion. Shopping & Dining Phnom Penh’s airport is home to Cambodia’s first Starbucks, which opened to much fanfare in January. Coffee lovers can also get their fix at Costa Coffee or Blue Pumpkin bakery. Western food is available in the form of Burger King, Dairy Queen, the Pizza Company, and BBQ Chicken. Those looking for an Asian fix can stop at Taste of Asia, a sit-down restaurant also located in the terminal, or Pho 24 on the ground floor.

For more upscale fare, the Foreign Correspondent’s Club runs a popular branch in the departure terminal offering a selection of dishes from its iconic Riverside restaurant. Thirsty travellers can also stop by for a beer and a chance to use the free Wi-Fi.
