Method for gulab jamuns:

In a bowl, add klim, elachi powder, nutmeg, butter ghee, bicarbonate of soda and semolina. Mix well. Add the plain flour and self raising flour and form into a soft dough. If more flour is need, add self raising flour. Roll into shapes with your palm and fry in half butter ghee and half oil on medium till golden brown.

For the syrup: Put sugar and water into a pot. Boil on medium heat until sticky. Dip in syrup and drain. You can the gulab jamuns in coconut as well. Make our own burfee

INGREDIENTS: 375ml (1½ cups) water 500ml (2 cups) Huletts White Sugar 500g full cream milk powder 375ml (1½ cups) melted ghee 3ml (½ tsp) cardamom (elachi) powder 250ml (1 cup) roasted almonds or pistachio nuts

METHOD: 1. Place the water and Huletts White Sugar into a large saucepan and bring to the boil. Stir until the sugar has dissolved and a syrup has formed and has turned a light golden colour. 2. In a separate saucepan, stir the ghee over a low heat until it browns and caramelises. 3. Combine the milk powder and ghee and mix well until the mixture resembles fine bread crumbs. 4. Stir the elachi and pistachio/almonds into the mixture. 5. Add this mixture into the water and sugar syrup. 6. Mix well and pour the mixture into a glass tray. 7. Decorate the top with a sprinkling of pistachio/almonds, gold sprinkles and gold dust. 8. Refrigerate for 2 hours. 9. Cut into squares, dust with Huletts Icing Sugar and serve.
