Characteristics: Made 100% with the small variety Garnacha Calabresa from old vines in (slate soil), Santibañez de la Sierra and Mogarraz (granitic soil). After a careful selection of the optimum collection moment (balance acidity / grade), it is proceeded to its incubation, passing through a manual selection table. A pre-fermentative maceration of 48 hours at 7/9 ºC is carried out, which gives way to a spontaneous alcoholic fermentation (we do not sow yeast) in stainless steel tanks of small volume and large diameter in order to accentuate the extraction of components with the own yeasts from the parcels of origin, and always at temperatures below 21ºC.

Discover and lightly press later on stainless steel tank where it completes the malolactic fermentation in three weeks at a maintained temperature of 20 ºC.

Subsequently, aging for 12 months in Bordeaux barrels of French and American oak of the second year, will emphasize the expressiveness and provide the just tannins, well integrated to the fruit character and mineral vividness. Finally, the wine is bottled and given a one-year rest period in a cage that has been turned over in a controlled temperature zone before going on the market. Without clarifications or filtrations or other subsequent treatments, therefore, it is likely that over time some totally natural sediment may appear.

CATA's notes: Cherry with medium-low layer characteristic of Calabrian, bright. Expressive nose Ripe fruit, mountain herbs, liqueur fruit, flower petals. Light toasted memory, sweet spices. Elegant. Frank. In the mouth fresh and expressive. Well structured and with balanced acidity. Ripe black fruit, balsamic. Full, long, serious. Bottling Date: February 2017. Production: 1,700 bottles (750 ml.) Consumption temperature: 15.5-16ºC. Alcoholic degree: 14º.
