ELDORADO NOIR RUSSIAN RIVER VALLEY 2016

Eldorado Noir is a truly unique dessert made from Black grown in the Russian River Valley.

AROMAS & FLAVORS This velvety wine has a beauful dark, purple color with lush aromas of rose petals, dried fig, fresh raspberries and warm spice leading to a wine that bursts with luscious black cherry compote and caramelized blueberry pie on the palate.

HOW IT’S MADE The grapes from our Russian River Valley were sorted and destemmed to a stainless steel tank for three days of cold soaking. Following the cold soak, yeast was added and pump overs commenced one to two mes daily for the duraon of primary fermentaon. Once fermentaon was complete, the wine was drained and pressed to neutral barrels for malolacc fermentaon and five months of cave aging before boling in April 2017.

THE Aer a very early and low yielding 2015 , the 2016 vintage began closer to an average start date, with vines producing good yields, even with another year of drought condions in Sonoma County. The per- formed well with considerable amounts of rainfall during late winter and early spring, combined with overall mild and warmer spring condions. Although there were many mornings of heavy fog in late August, most of the summer and early fall were consistently sunny, warm and dry. The growing season was ideal for quality wine farming and harvesng at opmal ripeness.

FOOD PAIRINGS Eldorado Noir is exceponal paired with rich, decadent chocolate desserts, as well as vanilla bean ice cream or bread pudding with plum or persimmons. Fruit-based tarts, shortcakes, fruitcakes, pumpkin pie, pecan pie or baked apples also pair nicely with this wine.
