Cut a thin slice from stem end of each pepper; remove 1/4 tsp. salt 1 tbsp. olive oil seeds and membranes; rinse. Cook peppers 5 minutes in enough boiling water to cover; drain. Season inside of peppers with 1 teaspoon salt and black pepper; set aside. Season insides of pounded chicken breasts with salt and 1/4 teaspoon pepper. Stir in maple syrup and cran- berries; cook 1 minute. Add cooked chicken, salt and pepper. Cook 1 minute or until hot; remove chicken using slotted spoon. Add rice and toss to coat; remove from heat. Brown pancetta and onion in large skillet over medium heat, cook until onion begins Toss in arugula; spoon rice mixture onto platter. Top with chicken and cheese. Serve to brown, about 8 minutes. LSU AgCenter invited Louisiana Department of Agriculture and Forestry Commissioner Mike Strain, D.V.M. and staff to see what has been accomplished since the facility began. The LSU Food Incubator has produced nearly 32 million tons of product, so far, this year. The incubator began in 2014 with the help of a USDA grant that was facilitated by the Louisiana Department of Agriculture and Forestry. The Food Incubator helps food producers who need commercial kitchen space and business assistance to produce their products.
