Posca Rustica Since 1983, Dupont has produced a beer especially for a Gallo-Roman site near the brewery where Iron Age life is interpreted. Inspired by research into drinks of the Gallo Roman era, Posca Rustica is surely one of the Dupont’s most exotic beers. It is a “Cervoise” beer spiced with a gruit (an old-fashioned herb mixture used to bitter and flavor beer, that was popular before hops came to predominate). Sweet woodruff (known as Galium odoratum or wild baby’s breath) and bog myrtle are just two of a dozen different spices used. Thanks to the refermentation in the bottle, we have the natural carbonation. The flavors are deeper, richer, more pronounced: malty, clearly roasted (is it hints of coffee, is it hints of chocolate?) Deceptive, because the relatively high alcohol content is not immediately felt, except maybe a slight glowing sensation. A complex aftertaste, with some licorice undertones, and a pleasant bitterness survives last. Absolutely a beer to savor and enjoy—let you taste buds experience every ounce of flavor. A good nose recognizes the hops, in combination with fruity esters. Witkap Pater Witkap Pater Stimulo is the most celebrated of the brewery’s beers. Today it bears the “abbey” designation. lt is twice fermented, once in vat and once in bottle. Witkap Stimulo is the lightest of the Trappist-style beers and is typically drunk at the midday meal. Witkap has a very high fermentation temperature (22° Celsius). It is held at this temperature for five days. The beer is aged for four weeks at 5° Celsius. The beers are then centrifuged. At bottling, Witkap is dosed with candi sugar and new yeast. A blonde beer that sparkles like champagne, it has an extremely estery nose with typical abbey notes of banana and berry. Unusually, this is followed by a light body and lemony finish. Overall the effect is something one could describe as an abbey lager. Witkap is invariably a surprise hit at tastings and is well worth seeking out. 6.0% ABV Birra Amiata Contessa Italian Pale Ale Tuscany, Italy Golden and clear in appearance, (Contessa) exhibits a nose of citrus hops and honey malt. Scotch de Silly Scotch de Silly is a top-fermenting hearty Scotch Ale with a smooth, really velvety taste and a hoppy bitterness. It is brewed with pure malt, English hops and some sugars. The Scotch de Silly is red-brown, not too dark, and offers an unusual flavor, typical for this style of beer. There is a long tradition to brew Scotish Style Ales in Belgium. These Belgian Scotish Ales are not only consumed in Belgium but are exported to Scotland and other parts of the world. 8.0% ABV Silly Saison Ale This style is typical for the country side of Hainaut, a Province of Belgium and a Department of France. It is a rural area with large grain farms, and these farms all used to brew. A lot of beer was needed for the many farm workers. The original style of Saison is a blend of 2 or 3 beers, with one of them being an old slightly . This extra touch of sourness gave it its thirst quenching nature for the farm workers in the summer. Today however, the quality of the Saison beers is perfect, but a real Saison should still be a blend of 2 beers. Blending beer is an art, and not all brewers master it. Unfortunately some brewers just give the name Saison to their amber ale. Pink Killer Pink killer is a beautiful blend of a Belgian White Ale and the tartness of Grapefruit juice. A WIT must be brewed using at least 25 % of wheat malts. Belgian wheat beers are fruitier, with a slight lemony touch, because the use of coriander seeds, orange peels, and other spices is very common. Pink Killer is made with water, malt, wheat, grapefruit juice, sugar, yeast, coriander, orange peel, and hallertau hops. Fruity and thirst-quenching, sweet yet not sickly, Pink Killer is a beer based on malt, wheat and pink grapefruit, which explains its very unique color and the hint of bitterness typical of this fruit, in turn quenching the biggest of thirsts with a very flavorful taste.5.0% ABV
