The “Vieux Rivallon” has 20 hectares planted mainly with Merlot (68%), with 25% of Cabernet Franc and the rest of Cabernet Sauvignon and Pressac. The method of vine cultivation has remained traditional.

We take out the weed with a rake, vineyard is plowed and vines are earth up. The soil is protected from chemical herbicides and naturally enriched by the contribution of basal dressing. We cuts the vine in Guyot simple.

In the spring, we do the nipping for a harmonious arrangement of bunch and then dropped the grapes from young vines to give them time to take root.

We patiently waiting for the berries are ripe and we grave harvest by hand.

The wine is vinified from generation to generation with the best care. It is vinified in stainless steel tanks or concrete with epoxy in thermoregulation. Then it is aged in vats and partly in French oak barrels. CHÂTEAU VIEUX RIVALLON SAINT EMILLION GRAND CRU

Domaine FL, our estate of 40 hectares located in the Loire Valley (south of Angers), was created by Philip Fournier through the union of two previously existing estates: Chateau de Chamboureau and Domaine Jo Pithon,

We produce a wide range of dry, sweet and botrytis wines from Chenin Blanc grapes grown on a variety of soils and appellations.

The Chenin grape expresses its “terroirs” perfectly.

We have 36 ha of Chenin Blanc and 4 hectares of Cabernet Franc.

All our work in the vineyard is carried out according to the rules of organic viticulture. We work the soil, short prune, de- bud and de-leaf by hand to ensure good aeration of grapes.

Our grapes are hand harvested and selectively picked for both dry and sweet wines. DOMAINE FL ANJOU – SAVENNIERES – COTEAUX DU LAYON – QUARTS DE CHAUME

We want to offer natural wines without any yeast or sugar added. Our aim is to fully respect the character of the vintage just as it was given to us by nature. Our wines are all fermented and aged in oak for 12 to 24 months.

For our dry wines, produced on the best hillside sites, we want the grapes to be ripe and golden but without botrytis so as to get fresh and crisp fruit. For our very sweet wines, the residual sugar is the result of botrytis and/or “passerillage”.

We are more interested in bringing out the botrytis aromas and character than in simply looking for high levels of sugar – that is the magic of true botrytis wines.

Our latest evolution was the arrival of the consultant winemaker Stéphane Derenoncourt in 2007.

Not only does he hand-craft wines for his own vineyard, Domaine de l’A (Cotes de Castillon), he is also the most sought after winemaker in the world. His knowledge in wine and international renown will lead our wines to excellence. DOMAINE FL ANJOU – SAVENNIERES – COTEAUX DU LAYON – QUARTS DE CHAUME

MAISON HONORE DU FAUBOURG

The Legend of Honoré

Paris 1688 ! On a beautiful spring day, a young man named Honoré became friend with an aged bishop native of the Châlons-en-Champagne area. Worn-down by time, the old man passed away a few months later. Before dying, he whispered to his friend’s ear the secret recipe for an elixir that he was the only one to possess. Honoré swore by all the saints that he would never disclose it to anyone.

History does not tell us what happened to him, or what he did with this weighty secret. But according to a legend, Honoré managed to seduce the prettiest girl in his neighborhood by following the old bishop’s recipe to the letter. Jealous men accused him of witchcraft. One morning, tired of being relentlessly attacked, Honoré and his beloved disappeared. Nobody ever saw them again.

In 1928, a sealed envelope, yellowed by centuries gone by, was discovered during the restoration of an ancient Parisian building on the rue du Faubourg Saint-Honoré. The dusty and almost illegible letter described with great precision a recipe with no alcohol based on red and white grapes. It was signed: Honoré. Back then the recipe was considered uninteresting and with no future. So the old envelope ended up in a box... before reappearing in 1988, on the stall of a secondhand bookseller on the banks of the Seine... FINE FOOD SELECTION CHOC’S FLEURS ORGANIC CHOCOLATE

We manufacture - my wife and I - our organic chocolate in a chocolate factory installed in our 18th century farmhouse surrounded by its 12 hectares classified refuge LPO where we have over 50 varieties of birds and about 450 varieties of plants . The whole is bordered by a river classified

Natura 2000 and surrounded by century-old hedges. For 20 years, no drop of pesticide has come to disturb the biodiversity.

With an ecologist grandfather, I pick plants and fungi since my childhood.

Because of my plant knowledge, some people use to call me by the nickname of "sorcerer" in the neighbourhood!

Before making choc fleurs ®, I was an organic gardener, and I made lemonade and shortbread with wild plants collected on site.

In 2008, I had the idea of incorporating plants in chocolate, making organic chocolate and decorate them with flower petals and seeds of hemp: choc'fleurs ® were born. In February 2008, I got the prize for bio innovation in Nantes.
