The Magazine of the Launceston Area Methodist Church April 2021 Edition 207 1 Dear Friends It is a great privilege to be asked to write an Easter message this year to you. We have all had a difficult year because of COVID 19 and I believe that the last three months have been especially difficult. The long days of restrictions have been hard for all of us and we have all probably wondered when they will come to an end so that life can go back to normal. I find it a great comfort to go out on walks with my dog Sam. Sam’s favourite place to go is wherever there are woodlands and if there’s a river as well that’s even better! He loves to chase after sticks and if they go in the water he loves to swim after them. Frank and I get a great deal of pleasure from watching Sam but we also enjoy hearing the birds singing, the golden heads of the daffodils, the snowdrops, the primroses and the trees bursting into blossom; all these things are signs of new life and the promise that warmer weather is on the way. The message of Easter is all about new life, love and hope. It is about the true story of God’s love and forgiveness of sins shown to us through the death of Jesus, His Son; it is also a celebration that God raised Jesus to new life so that our joy may be complete as we trust in Him and follow in His ways. -

WHITE PORTION: 6 egg whites Pinch of salt 1/2 e. cake flour 3/4 cup sugar 1 t. vanilla 1/2 t. crea m of tartar Sift flour & sugar together 4 times. Beat egg whites 1 crea m of tartar 1 and salt until stiff. Fold in flour & sugar 1 a little a t a time. Fold in flavoring. Spoon mixture into bottom of ungreased 1 O.. tube pan. Cut lightly through wit~ spatula or knife to elimate air bubbles. YELLOW PORTION: 6 egg yolks Pinch of salt 1/2 e. boiling water 1 e. sugar 1 1/2 e. flour 1 t. lemon extract 2 t. ba king powder Sift flour & measure. Sift with baking powder 4 times. Bea t egg yolks until thick & light. Add salt & sugar and beat until very thick. Add flour mixture alternately with water to egg mixture. Blend in extract. Spoon over white ba tter in pan. Ba ke in prehea ted 3 2 5 degree oven for 4 5 to 60 minutes. Invert pan on cake rack until completely cooled. Remove from pan and frost. LEMON SNOW ICING 1 1/2 e. sugar 1/2 e. water 3 egg whites 1 t. lemon extract yellow food coloring Boil sugar & water until syrup forros thread. Beat egg whites until stiff. Slowly pour hot syrup over whites while beating it in. Continue beating until frosting stands in definite peaks. Fold in extract & food coloring if desired. Frost sides & top of cake. -

Shades of Cinnamon A Mini Collection of SWEET BAKES Cakes and Cupcakes A mini selection of some of my favourite sweet bakes from the blog Shades of Cinnamon.com Cakes and Cupcakes Coconut Bundt Cake Simple Almond Cake Devil Food Cake “The Boyfriend Cake” Vanilla Layer Cake with Chai Spiced Buttercream Coconut Cupcakes with Cinnamon Popcorn Dust Bee Sting Cupcakes 2 170g butter 240g flour 1 1/2 cups packed shredded coconut 1/2 tsp salt 270g white sugar 2 large eggs 2 large egg whites 2 tsp vanilla extract Coconut Bundt Cake 3/4 cup coconut milk A soft and moist cake with a drizzle topping For the Icing: 180g sifted icing sugar 3 Tablespoon milk • Preheat oven to 175ºC/ 350ºF. • Grease and flour 20cm / 8 in Bundt Pan. • In a food processor, pulse 1/2 cup shredded coconut, flour, baking powder and salt until well mixed. • In a mixer, beat the butter until creamy and gradually add sugar until light and fluffy. • Add eggs, egg whites and vanilla extract and beat well until mixed. • Add the flour mixture alternating with the coconut milk, starting and ending with the Coconut flour mixture and beating well after each Bundt Cake addition. • Pour the batter into prepared bundt pan and bake for 35 minutes or cooked • Transfer to a wire rack and allow to cool in the pan for 30 minutes. • Beat the icing sugar and milk until smooth. Serves : 10 • Drizzle icing over the top of the cake and sprinkle with more shredded coconut. Simple Almond Cake A rich almond Cake sprinkled with Castor Sugar 115g / 4 0z butter RICH ALMOND CAKE 145g / 5oz castor sugar METHOD 90g / 3oz almond flour, sifted 425g / 1 1/2oz flour, sifted Grease and flour an 18cm / 7in cake tin. -
Family Friendly Simnel Cake
FAMILY FRIENDLY SIMNEL CAKE This time of year it’s traditional to make a Simnel cake. So we got busy in the Babease kitchen and thought we would have a go at a gluten-free, refined sugar-free version that is just as yummy as the original recipe yet much healthier. It's also super easy to make and perfect for the whole family to enjoy! We also chose to make our own marzipan to keep the cake sugar free! The almonds we used were quite coarse which gives it a nutty texture but feel free to use finer ground almonds if you want to get a more traditional finish. WHAT YOU NEED WHAT TO DO For the Marzipan: Start off by making the marzipan. Empty all the ingredients into a bowl and knead until you get a dough that is not too sticky. 250g ground almonds Add more almonds if it sticks to your hands. 3 tablespoons maple syrup 1 teaspoon vanilla essence (use almond essence if you Knead for 3-5 minutes - it is a good job to give to your little one like a stronger almond flavour) if they are old enough to help out! Wrap with cling film and put to one side. It can also be done a day in advance. To make the cake - For the Cake: Pre-heat the oven to 150 degrees then grease and line an 8- 250g Medjool dates, roughly chopped inch cake tin. 200ml boiling water 100g soft butter Put the chopped dates into a pan with the hot water and the 1/4 teaspoon bicarbonate soda bicarbonate of soda. -
