Signed: Date: 2 Abstract This thesis brings a focus to food and its cultural geographies by examining the ways that diasporic communities forge networks of distribution and the role of homesickness in shaping tastes in consumer societies. It also adds food (as material and immaterial culture) to diasporic geographies by highlighting the importance of food practices for migrant identities and sense of belonging. Through an investigation of food practices among Brazilians in London this research also contributes to an understanding of how this recent, numerous but under researched South American group experience migration in an everyday basis in London. The investigation undertaken includes desk research on food provision systems, semi-structured interviews and documentary field research with Brazilian food providers across London, focus group discussions with Brazilian migrants, periods of observational research in case study shop and restaurant outlets, and ethnographic domestic research with case study Brazilian households in Harlesden, Brent (an area of London with marked Brazilian immigration over the last decade). My analysis considers ‘Brazilianess’ as a category and cultural-culinary form being made and contested in London. An overview of the dynamics of Brazilian food provision in London shows that this making and contesting operates through both the material culture of food provision and the social lives of public spaces such as restaurants, cafes and grocery shops. Brazilian food consumption thus operates in a number of different registers linked to practicality, emotion and ethnic identification. A closer look at public Brazilian food consumption spaces reveals how such places create collective migrant spaces of belonging by translocalizing Brazilian life. In the domestic settings, food narratives and observation reveal the materialities and practices of migrant home making in mixed households and the processes through which consumption practices are negotiated and contested by different household members. 3 Acknowledgments First I offer my profound gratitude to my supervisor, Professor Phil Crang for his continuous support and intellectual guidance. O maçarico-de-bico-virado, Limosa haemastica é considerado uma das aves pernaltas mais pouco estudadas que se reproduzem na América do Norte. Durante a migração, esta espécie utiliza poucas escalas até alcançar áreas de invernada no sul da América do Sul. Desta forma, estudos biológicos no decorrer de sua rota de migração são escassos. O foco deste artigo foi analisar o comportamento de forrageio de três indivíduos migrantes do maçarico-de-bico-virado que fizeram escala em áreas de entre-marés da costa sul do estado de São Paulo. Eu utilizei uma câmera digital para filmar e quantificar precisamente as técnicas de forrageio, o tempo de forrageio em hábitats e as distâncias percorridas pelas aves.

D. Cornell University 2017 Abstract Cooking responds to this double entendre of a past that is collected, interpreted and then projected on to a present that then overcomes it. New food trends necessarily imply questions about social and cultural equality and identity. That which is novel is exciting and refreshing; it implies learning and broadening boundaries, which are often geographical and social and always cultural. However, the process also entails the inherent challenge to define and answer what is lost and valued in a new scenario and to understand to what purpose. Some categories that have been used to understand such historical processes of cultural production in social systems are class, race, ethnicity and gender, as well as concepts associated with territory, differentiation, integration and democratization, authenticity and exoticization. Local fishers complain that shrimp and lobster trawling fishing is the main factor responsible for low stock abundance, but they still persist in these activities as these two species command the highest market prices. So they feel that the target species are already over-fished. We suggest that proper management action, alternative ways of income generation and the payment of job insurance would help to mitigate the problem. Baldwin, DHTM * Introduction At present there has been research done with respect to the history of Japanese cuisine, the outlook of Hong Kong’ restaurants as it relates to tourism, and its relationship to culinary tourism, and Michelin rated restaurants. However, there is a significant gap with the recent phenomenon of the rise of Japanese Michelin rated restaurants and their emergence into the Chinese market. For this market there are numerous opportunities and avenues because Hong Kong is the gateway into the China market and Asia. These restaurants bring a certain heir of class and respect to Hong Kong as a “Culinary Destination.” Like many countries, Japan has many different styles of cuisines through the various prefectures and regions of the country. Previous researchers have often times looked at the introduction of sushi and sashimi into other areas and cultures because of its lore of being raw and uncooked fish, mollusks or shellfish products. For most countries raw fish is not consumed so it is understandable why this would be such an important item and factor into transferring Japanese cuisine. It is because of this that this paper will not look at sushi in that same capacity of introduction but rather by technique and flavor composition. Moreover, this research will include a look at four other areas of Japanese cuisine that are just as important as sushi. The first being kaiseki or the most formal and seasonal of Japanese cuisines, second is yakitori/yakiniku or grilled chicken, beef and barbecue style restaurants that specialize in preparing all parts of the chicken or cow, thirdly is ramen, traditionally a spinoff of a Chinese noodle soup but has become a staple of recognizing Japanese food, lastly there are izakayas which are the Japanese version of pubs (Cwiertka, 2006; Ashkenazi & Jacob, 2000; Lee, 2009; Barber, 2009).

    Menu Feijoada Pao de Quejo Moqueqa de Peixe Rice Brigadeiros (dessert) Guarana (beverage) Glossary Brigadeiros: A simple Brazilian chocolate candy, created in the 1940s and named after Brigadier Eduardo Gomes, whose shape is reminiscent of that of some varieties of chocolate truffles. It is a popular candy in Brazil and it is usually served at birthday parties. Gomes was Brazilian Air Force Brigadier. Later he ran unsuccessfully for the presidency in 1946 and 1950. This was a time of shortage of traditional imports such as nuts and fruits because of the war. But, at the same time, Nestle was introducing its brand of chocolate powder and condensed milk into the country. Churrasco: In Brazil, churrasco is the term for a barbecue (similar to the Argentine, Uruguayan, Paraguayan and Chilean asado) which originated in southern Brazil. Brazilian churrasco contains a variety of meats which may be cooked on a purpose-built "churrasqueira", a grill or barbecue, often with supports for spits or skewers. Portable "churrasqueiras" are similar to those used to prepare the Argentine, Paraguayan and Uruguayan asado, with a grill support, but many Brazilian "churrasqueiras" do not have grills, only the skewers above the embers. The meat may alternatively be cooked on large metal or wood skewers resting on a support or stuck into the ground and roasted with the embers of charcoal (wood may also be used, especially in the State of Rio Grande do Sul. Dende oil : Used in Brazilian and West African cooking palm or dende oil is made from the kernel of the palm fruit. The oil is thick and red-orange in color with a nutty flavor and high in saturated fat.
