Uyghurs are the people who have played a central role on the Silk Road throughout history. They mainly live in the northwest part of present-day in a region that China calls the “ Uyghur Autonomous Region”, and in diaspora worldwide.

For thousands of years, the area of today’s Xinjiang Uyghur Autonomous Region was controlled by a succession of nomadic Turkic empires, notably the Uyghur Khanate which ruled in the eighth and ninth centuries. The term “Uyghur Äli,” found in a medieval Uyghur manuscript means “The Country of the .”

Küsan (also: Kucha, Kuçar, Kuchar) was an ancient Buddhist kingdom located on the branch of the Silk Road that ran along the northern edge of the Taklamakan Desert in the Tarim Basin and south of the Muzat River. According to the Book of Han (completed in 111 CE), Küsan was the largest of the "Thirty-six Kingdoms of the Western Regions" with a population of 81,317.

For a long time, Küsan was the most populous oasis in the Tarim Basin. As a Central Asian metropolis, it was part of the Silk Road economy and was in contact with the rest of including Sogdiana and Bactria, and thus also with the cultures of South Asia, Iran, and China.

As many people know, the Silk Road was an ancient network of trade and cultural transmission routes that connected the West and East by merchants, pilgrims, monks, soldiers, nomads, and urban dwellers from China and India to the Mediterranean Sea over many centuries.

Uyghur cuisine was formed as a combination of the best of West and East. It has maintained its uniqueness through delicious home-made cooking in the likes of Laghman, Polo, Samsa, Kawap, Göshnan, etc.
