THE PALACE The Melbourne Gin Palace was shut down on 18 October 1870 by a Magistrate for being in a filthy and disgusting condition. Even though Vernon Chalker couldn’t prove that any members of his emancipist family were directly involved in the operation of this lurid establishment, he felt a strong, somewhat mystical, calling to resurrect its reputation and bring back the glory of the Gin Palace once enjoyed by royalty, magnates, swindlers and cads during the Marvelous Melbourne gold rush era. 115 years, 6 months and 16 days after its ignominious closure the Gin Palace re-opened its doors to great fanfare, tempting Melbourne’s elite to enjoy a magnificent selection of luxurious libations fit for a new era of vulgar consumption. Oh, how the Martinis and Champagne flowed like a raging, sparkling river of heady debauchery every night of the week.

Our list of features vast quantities of the best and worst gins in the world. Peruse the menu at your leisure; however please don’t hesitate to ask the knowledgeable staff should you need clarification on the myriad of mysteries surrounding these complex liquids. Please be aware however that some of us are employed for our looks alone; therefore there may be need to consult an always available higher authority.

Our cocktail list is influenced by rare and seasonal ingredients. We use fine quality fresh produce and exotic (some almost extinct) botanicals to make a daring range of syrups, tinctures, cordials and sodas. Our gin & tonic list is dazzling. Lashings of your preferred gin served in a capacious goblet matched with ripe fruits and paired with a tonic that suits it best. We have numerous different varieties of tonic waters to choose from. If that is not good enough, tell one of our exuberant staff and they will no doubt attempt to make a distinct version for your imbibing. Gin is not all. The bar is well stocked with many other corrupting temptations that are listed below. Late last century we were voted one of Melbourne’s 50 best restaurants based solely on the undeniable saucy deliciousness of our world famous toasted chicken and mayonnaise sandwiches.

Poor Tom's Wet Martini Poor Tom's gin, house-made mandarin infused Lillet Blanc, orange twist If ever there was a gin that epitomises Autumn, this local Sydney based gin would be it. A light, floral and delicate option perfect for a balmy Autumn eve. $28

Botanist Sherry Kicker Martini Botanist Dry gin, La Goya Manzanilla sherry, lime twist This herbaceous love affair between Islay and Jerez will leave you itching for another. The resultant love child between botanists, winemakers and bartenders is dry, savoury and ever so complex. $30

Rolls Royce Martini Beefeater 24 gin, Balthazar white vermouth, Maidenii sweet vermouth, D.O.M. Benedictine, lemon twist While the exact history has been lost to the ages, the Rolls Royce was first recorded in the 1930s Savoy Cocktail Book and was considered the height of luxury. This cocktail is a version of the wet and perfect martinis of the late 19th century. This concoction is an excellent introduction for those wanting to explore the world of martinis. $24

Wet & Dirty Martini Manly Spirits dry gin, Maidenii dry vermouth, olive brine, rosemary, olives The coastal influence of the sea drives this savoury style martini to flavours into unchartered territory. This all-Australian pairing delivers a bold impression upon the palate, with native botanicals here captaining the ship. The Gin Palace take on a dirty martini. $28

MARTINIS Melbourne Cup Day 1997; the Gin Palace opened its doors and liberated the repressed Australian Martini imbiber from the shackles of sweet fruity pedestrian cocktails of the eighties and nineties. These five Martinis have stood the test of time and have remained on the list from that day forth.

Dry Martini , Noilly Prat dry vermouth, olives The staple of Gin Palace, of course you can have a twist or take it wet, change the gin, even the vermouth, or just have it naked. It’s up to you; please ask us for advice on how to tailor your martini to you. $23

Barrel Aged Martinez Plymouth gin, Maidenii sweet vermouth, maraschino liqueur, Angostura original aromatic & orange bitters, lemon twist We take a traditional recipe and rest it in a small barrel behind the bar for 6 weeks. This softens out the rough edges and helps all those different ingredients blend together in textural fabulousness. $24

Orange Plymouth gin, Noilly Prat dry vermouth, Maidenii sweet vermouth, orange zest, Angostura original aromatic bitters, orange twist Adapted from the famous Savoy cocktail book of the 1930’s, we soak orange zest in gin, dry & sweet vermouth for a week before bottling. $23

Vesper Plymouth gin, , Cocchi Americano, shaken, lemon twist James Bond likes to not only add vodka to his martini, but also shake it. Usually seen as a no-no, for some reason this cocktail works, making it a yes yes. $23

1951 Plymouth gin, Noilly Prat dry vermouth, Cointreau liqueur, anchovy stuffed olives The martini that won the 1951 martini competition in Chicago balances the sweetness of Cointreau with the saltiness of anchovy stuffed olives. $23

GIN & TONICS Our G&T’s are 50ml serves of gin paired with an appropriate tonic. We then select garnishes that will accentuate the notes of both the gin and the tonic. Grandly served in a fabulous Burgundy glass, it is quite fancy and will make you feel so.

Plymouth & pH-enomenal Tonic Garnished with lemon, thyme & flowers Classic meets curious. Plymouth dry gin paired with a lip puckering German tonic syrup, which displays high notes of orange and lemon citrus. $26

East London Liquor Company & Bittermilk Charred Grapefruit Tonic Syrup Garnished with grapefruit, salted caramel fudge & cardamom pods Made at a small craft distillery in East London, this classically dry gin utilises grapefruit and cardamom, enhanced with a powerful, citrus tonic syrup. $27

Hendricks & Fever-Tree Elderflower Tonic or Hendricks Quinetum Tonic Syrup Garnished with frozen strawberries, cucumber & dried rose The gin of the moment paired with a tonic made with elderflower, or their very own syrup designed to match Hendricks perfectly. We took inspiration from the botanicals used in Hendricks of cucumber and rose to produce a beverage reminiscent of an English garden. $26/$27

Pimms No. 1 & Capi Tonic Garnished with orange, cucumber & mint The quintessential English gin-based fruit cup served with classic tonic and traditional garnishes. Sometimes traditions need to be upheld. $16

Four Pillars Dry or Navy Strength & Fever-Tree Indian Tonic Garnished with Four Pillars marmalade, apple & bay leaf Four Pillars gin combines classic botanicals with a few modern twists, including whole oranges, star anise and Tasmanian pepperberry leaf. Those same oranges then get turned into a botanically-infused marmalade post-distillation. We thought that was too fancy not to be included in a G&T. Now to decide whether to choose the classic dry, or dare to attempt the robust Navy strength. $26/$30

Martin Miller’s Reform & Capi Tonic Garnished with lemon, cucumber & dill Martin Miller was a womanizing Bon Vivant who made fortunes through antiques and as a hotelier. His lust for the perfect Martini sent him on a quest to procure the finest ingredients thus utilizing Icelandic glacial water to dilute a truly English expression of gin. Crisp and refreshing, a great alternative to the classic dry gin category. $24

Melbourne Gin Company & Fever-Tree Mediterranean Tonic Garnished with grapefruit, flowers & Melbourne Rooftop Honey paint This delicate and floral combination combines two of Melbourne’s finest made consumables. As the gin cascades over your palate, the aroma of honey adds an extra dimension to the sensory experience. $22

Peanut Butter Genever Time Corenwyn genever, house-made peanut butter infused gum acacia, Angostura aromatic bitters, accoutrement Favouring robust winter spices, delectable notes of honey and a hint of vanilla, there’s no better pairing for this spirit of old than with our house made peanut butter syrup. Smooth and creamy, this rich nightcap somehow tastes better at 2am. Don’t believe me? Try it for yourself. $20

Gin Zombie Hobart No.4 Single Malt gin, navy strength gin, aged gin, sloe gin, gin, gin, and more gin, fresh pineapple juice, lime juice, barrel aged Negroni syrup This high octane Polynesian inspired swill will ensue a zombie like numbness. We insist on no more than 2 per sitting as the result will have you muttering “brains”. $33

London Calling Plymouth gin, La Goya Manzanilla sherry, lemon juice, sugar syrup, Angostura orange bitters, grapefruit twist A modern classic that is barely in its teens, bringing Sherry back into favour with bartenders and consumers alike. Dry, sour, citrus and sharp, this brings something for everyone to the table. $20

Pegu Club Plymouth gin, Cointreau, lime juice, Angostura orange bitters, Angostura aromatic bitters, lime This mouth-puckering cocktail was invented in the bar of its own name, The Pegu Club, which originates from the unusual area of Myanmar. This cocktail was originally served to British soldiers in the late 19th century and was first printed in The Savoy Cocktail book. It has been brought back into popularity by Manhattan bar also named The Pegu Club, opened in 2005. $22

Hanky Panky Plymouth gin, Maidenii sweet vermouth, Fernet Branca, lemon twist Created by legendary bartender, Ada Coleman, who was head of the Savoy’s American Bar from 1903 until her retirement in 1926. So created for a weary customer who was seeking a punchy pick-me-up and remains to this day, one hundred years later, the ultimate swizzle for those in search of ever more flavour in their glass. $24

Flora Dora Plymouth gin, house-made ginger syrup, house-made raspberry syrup, lime juice, soda, lime & ginger garnish Named after a hugely successful comedic play in 1899, this cocktail has been adapted into many forms since its inception in 1933 but has always remained true to its fresh, bright and citrusy flavours. $21

The Bee’s Knees Plymouth gin, lemon juice, house-made Melbourne Rooftop Honey syrup, lemon twist Emerging from the Prohibition era as a result of illicit American gin production. Bartenders of the day would balance a then illegal bathtub gin with fresh citrus and the sweet, floral undertones of honey syrup. $20

NEGRONIS A bartender staple for years, this wonderful drink centers around the red, Italian, bitter Campari. Here we have a selection of delicious variations based around gins and vermouths.

White Negroni East London Liquor Company dry gin, Chartreuse Yellow, Escubac, lemon twist A rather unusual twist on the Negroni ensuring a multitude of flavours swirling across your palate. Gin is here combined with two herbaceous French liqueurs, resulting in the bittersweet flavours you are used to in the Negroni in a whole new shade. $28

Australian Negroni 78 Degrees gin, Adelaide Hills 'Bitter Italian', Adelaide Hills sweet vermouth, orange twist Taking the best of South Australia, we have combined three Adelaide Hills Distillery products into one fabulous Negroni. Their local take on Campari utilises riberry to give classical bitter sweet flavours and works perfectly alongside their gin and vermouth. $23
