BAKED COD WITH GARLIC AND HERB RITZ CRUMBS INGREDIENTS: 4 Center Cut, Boneless, Skinless Cod Filets ½ Cup – Ritz Crackers Crumbled 1/3 Cup – Panko (Japanese Bread Flakes) 2 TBSP – Minced Fresh Parsley 2 TSP – Minced Garlic 1 TSP – Grated Lemon Zest 3 TBSP – Unsalted Butter Melted ¼ Cup – Dry White Wine (Pinot Grigio) 2 TBSP – Freshly Squeezed Lemon Juice Lemon Wedges Good Olive Oil Kosher Salt, Freshly Ground Black Pepper

Preheat the oven to 400.

Pour 2 tablespoons olive oil into a 9X9 ceramic baking dish and tilt the fish to cover the bottom with oil. Place the fish filets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 ½ teaspoons salt and ½ teaspoon pepper and bake for 10 minutes. Place the crackers in a food processor and process until finely ground. Combine them with the panko, parsley, garlic, lemon zest and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside. Remove the fish from the oven and pour the wine and lemon juice directly on the filets. Pat the crumb mixture evenly onto the filets. Return the pan to the oven for 12 more minutes, until the filets are just cooked through in the center, depending on the thickness of the filets. Sprinkle with salt and serve hot with the pan juices and lemon wedges. WINE PAIRING well curated entrée like the one able deserves an equally well chosen wine.
