Chocolate & Friends Cake ..............93 TOP FTEN APPLE CRUMBLE CAKES Submitted by Collette from an adapted family recipe The perfect way to use up old bananas and apples and perfect to freeze for school/work lunches. INGREDIENTS Cake Mixture Crumble mixture • 150gams of butter or margarine • 1 cup plain flour • 1 ¾ cup plain flour • ½ cup raw sugar • 3 teaspoons baking powder • 125 gams butter or margarine • ¾ cup sugar • ½ teaspoon ground cinnamon • 3 eggs • ½ cup milk • 2 ripe bananas • 5 medium apples METHOD 1. Preheat oven to 180C. Arrange 24 muffin size patty pans on a tray. 2. Using an electric mixer, cream butter and sugar. 3. After each further addition, mix well. Add bananas. Add eggs and milk. 4. Finally add flour and baking powder. 5. Peel and core apples, and chop into small pieces. 6. Place some chopped apples into the bottom of each patty pan. 7. Pour the cake mixture over the apples, filling each patty pan to approximately ¾ full, leaving room for the crumble mixture on top. To make Crumble mixture 8. Into a mixing bowl, put flour, sugar and cinnamon. And using an electric mixer, mix dry ingredients well. Add bits of butter/margarine and mix on medium speed until all the butter is incorporated, and the mix resembles coarse breadcrumbs. 9. Sprinkle the crumble mix over the top of each cake. 10. Place cakes in oven and cook for 20 minutes or until the cakes are firm to touch. Eat warm. 2 AWARD WINNING BROWNIES Submitted by Ari from a recipe by Stella Parks American Baker I won First Place with this Recipe at the 2019 Royal Show (Primary School years 4-7). I bake it only as a treat as it doesn’t even last a day in our house! INGREDIENTS • 350gm butter • 170 chopped dark chocolate • 450gm white sugar • 55gm brown sugar • 1tsp salt • 6 eggs • 1tsp vanilla • 125gm plain flour • 115gm Dutch cocoa METHOD 1.     Hot Water Crust Pastry Hot water crust pastry is the most forgiving type of pastry. It doesn’t judge you by your experience and even when you fail, it allows you to start again and make it better – that is, if you keep it warm. When it cools, it doesn’t stretch and it will break, and become more demanding. Hot water crust is sturdier and therefore may be a little less elegant than shortcrust or puff pastry, but as a result it can also handle wetter and heavier fillings without fear of sinking, leakage or dreaded soggy bottoms. The pastry holds up and sculpts very well and is therefore ideal for hand-raising pies, moulding the pastry around a pie dolly or pie block, and for free-standing pies, where the pie mould or tin is lined with pastry and then removed before the last stretch of baking. It should certainly not be kneaded too much – just enough to make sure that everything is blended well. Overworked hot water crust pastry turns into a tougher, chewier crust, but this doesn’t mean the result will be inedible, just that it could be better. Because the fat for the hot water crust is melted, it is much better distributed throughout the dough, which creates a consistent pastry that will colour much more evenly while it bakes. Other pastry methods require you to rub the fat into the flour with your fingers, which can lead to inconsistencies in the colour of the baked result. Except for pork pies and Scotch pies, the dough should not be rested before use as it tends to toughen up, dry out and crumble when cooled.

    Lemon Curd Lemon Curd Makes: Approximately 2 cups Ingredients: 8 egg yolks 1/2 cup caster sugar 150g butter 4 large fresh lemons Method: Place the egg yolks and sugar is a small saucepan and place on a low-medium heat, whisk the egg mixture until the sugar is dissolved Roughly chop the butter and add into the egg mixture and whisk until the butter is fully melted, whisking regularly Freshly grate the zest of 3 of the 4 lemons and add to the mixture in the saucepan Finally add in the juice of all 4 lemons to the mix and combine well with the whisk Simmer for approximately 15 minutes until thickened Once thickened pass the curd through a sieve to ensure you extract any lemon pulp and/or seeds and are left with a beautiful smooth curd Allow to cool before transferring to a air tight container and storing in the fridge. As related to the current reality, trade names have become key elements of the marketing strategy, with a strong influence on language. In the case of confectionery and pastry products, the intention of the sender (the supplier) is to raise the interest of the receiver by simple, concise, clearly expressed words, showing the quality, the basic ingredients and the origin of the food. These elements determine the success of the product on the market and its recognition by means of the advertising discourse.
