Keller talks about filtering his sauces and such and says that some of his liquids are filtered up to 20 times. I doubt that Ill be doing that very much if at all, but thats the type of detail that goes into fine dining, in what some chefs call the best restaurant in the world. Everything you need to know about Kellers creation is in here. I got this in a double set of books; the other is Kellers book about Bouchon, which is his other restaurant on the west coast. Keller explains that he wanted to avoid using the word Bistro in the other book, because it has lost its meaning in the United States. Together as a set I now have both the finest French inspired recipes and a more approachable Bouchon style of cooking as well. Lastly, if that wasnt enough, Chef Keller also gives a listing of some of his suppliers in the back of the book. Two masterpieces that I am very proud to own.
