AFFUMICATO | 28 Cognac, Cuban Rum, House Vermouth, Cacao Liquor A bold smooth reminiscent of a Vieux Carré. Perfect while reading your leather bound books in your apartment that smells of rich mahogany wood. Smoked with apple wood and poured table-side over a crystal clear cube. Garnished with a dark chocolate cigar.

MOJITO THEN & NOW | 36 Rum, Lime, Mint This is prepared two ways. The first is made in the traditional style with muddled lime and mint. The second is made table-side using liquid nitrogen to freeze and powder the mint, then the mojito liquid is frozen into a sorbet.

HEAD IN THE CLOUDS | 26 Gin, Lemon, Almond, Pistachio, Rose, Egg White This silky smooth cocktail is a take on a classic gin . It utilizes a syrup made from nut milk to give it with a rich savoury mouth feel. The cocktail is served with multiple meringue that have been frozen with liquid nitrogen. After eating each meringue the cocktail will have a subtly different flavour.

THE SOUR SIBLINGS | 28 Tequila, Vodka, Cognac, Cointreau, Lime, Cranberry This is a cocktail flight designed to showcase the similarities behind three favourite classic cocktails, The , The , and The . The spirits are served super chilled in frozen tasting glasses and paired with sour raviolis.

APEROL BUBBLETEA SPRITZ | 26 Aperol, Gin, Pomegranate, Pineapple, Lemon, Grapefruit, Soda This is a refreshing gin cocktail with a bubble tea twist. Small pearls of Aperol give a bitter kick to the cocktails sweet-tart balance.

WINDOW TO | 34 Aged Rum, Falernum, Spiced Pineapple Syrup, Lime, Coconut Ice Water Take a trip to the tropics with this Tiki style cocktail. Poured from a porthole infuser over coconut water ice cubes, this cocktail is meant to change over time.

ALFONSO XIII COCKTAIL | 16 Dubonnet, Fino Sherry, Lemon Twist Named after Alfonso XIII of Spain, a playboy king and well-documented bar patron. This cocktail is the perfect aperitif, starting with sweeter herbaceous notes, finish crisp dry and citrusy.

THE SPRITZ | 18 Your Choice of Aperol, Campari or Vermouth, Prosecco, Soda Became popular in the 1950’s and is still the mainstay of the Italian Aperitif hour!

CHRYSANTHEMUM | 16 Vermouth, Benedictine, Absinthe, Lemon Twist The Chrysanthemum Cocktail puts vermouth in the starring role, adding Bénédictine and absinthe for delicious complexity.

FRENCH 75 | 20 Gin, Lemon Juice, Prosecco Named after the French 75mm light field cannon used in WWI, this tart and refreshing drink packs a punch, like the cannon it was named for.

AMERICANO | 18 Vermouth, Campari, Soda First served in 1860 at the Gaspare’s Campari bar in Milan. The cocktail was named for it’s popularity among American tourists. A long bitter-sweet drink that will delight your palate.

LUCIEN GAUDIN | 20 Gin, Campari, Cointreau, Dry Vermouth Named for an early 20th century French Olympic fencer who won 6 Olympic medals. A pleasantly bitter drink that is simultaneously rich and dry.

APERITIF COCKTAILS

MINT JULEP | 24 Bourbon, Mint Official drink of the Kentucky Derby. The cocktail dates back to the 1820s, when references appear to sterling silver julep cups being awarded as trophies to first-place jockeys. It is a bold refreshing and minty cocktail, perfect for a hot summer afternoon.

SHERRY COBBLER | 18 Sherry, Orange Juice, Summer Berries The Cobbler is thought to have originated sometime in the 1820s. It is one of the first known cocktails to use a reed (straw) and is credited with making the straw popular. Rich and fruity with a Dry finish.

MARTINI | MP Vodka or Gin, Dry Vermouth This classic would be James Bonds perfect aperitif. Have it as it was originally made with an equal portion of Vermouth. Or as Winston Churchill preferred with a nod towards the Vermouth bottle. Our preference is Gin to Vermouth 5:1.

BALANCED WITH CITRUS

NEW YORK SOUR | 22 Bourbon, Lemon Juice, Red Wine, Egg White, Originally known as the Continental Sour or the Southern , the newly popularized named was claimed to have been invented by a Chicago bartender in 1870. Tart and bold with a refreshingly smooth finish.

SIDECAR | 26 Cognac, Cointreau, Lemon Juice Created in Paris during world war one, named for an American captain who drove a motorcycle with a sidecar. It is a well-balanced delight, the father of many classic cocktails.

TOMMY’S MARGARITA | 22 Tequila, Lime Juice, Agave Created in the early 1990s by Julio Bermejo and named after his family’s Mexican restaurant and bar in San Francisco. Agave syrup replaces the triple sec in a classic margarita, allowing the pepper and vegetative qualities of the tequila to shine through.

CLOVER CLUB | 18 Gin, Lemon Juice, Raspberry Syrup, Egg White Predating Prohibition, and taking its name from a Philadelphia men’s club for bankers and lawyers. It’s bright and fruity, yet has enough of a hit to quench the tipple thirst.

CAIPIRINHA | 22 Cachaça, Lime, Sugar Brazil’s most famous cocktail, the original recipes included garlic and honey when the drink was a remedy for the Spanish Flu. In the modern versions the honey and garlic are replaced with sugar, and it is a good remedy for the heat.

COSMOPOLITAN | 22 Vodka, Cointreau, Lime Juice, Cranberry juice Before Sex and the City, the first reference to the Cosmo appears in the 1934 book “Pioneers of Mixing at Elite Bars” which includes gin, triple sec, lemon and raspberry syrup. Our Cosmo is bold and refreshing with a slightly tart balance.

Mai Tai | 20 Jamaican Rum, Demerara Rum, Cointreau, Almond Syrup, Lime Juice This cocktail was created by a professional rivalry between two California restaurateurs: Don the Beachcomber and Trader Vic. The result is a sneaky strong cocktail, with a tropical feel and a slightly sweet balance.

LAST WORD | 22 Gin, Maraschino, Green Chartreuse, Lime Juice The is a Prohibition-era cocktail that got its beginnings in the Detroit Athletic Club’s bar in the early 1920s. A perfect sweet tart balance, with a herbaceous and nutty finish.

PISCO SOUR | 22 Pisco, Lemon Juice, Egg White, Angostura Bitters The incarnation of the drink is credited to Victor Morris who emigrated from Peru in 1903. A bold sour with a smooth finish.

SHORT AND BOLD

SAZARAC | 22 Rye, Armagnac, Absinthe, Bitters The is one of America's oldest cocktails, made originally as a cure all in the 1830s by Creole pharmacist Antoine Peychaud. Bold and complex with a lingering anise finish.

GREEN POINT | 22 Rye, Sweet Vermouth, Yellow Chartreuse, Bitters This Modern classic is a take on the and cocktails, created in 2006 by Michael McIlroy at Milk & Honey NYC. Big and bold, with a delicately sweet and herbaceous finish.

NEGRONI | 20 Gin, Campari, Sweet Vermouth, Orange Zest This is Count Camillo ’s answer to the Americano who needed a “stiffer” drink than what the Americans were drinking. Bold orange zest and bittersweet.

DE LA LOUISANE | 22 Rye, Benedictine, Sweet Vermouth, Absinthe First published in the 1937 “Famous New Orleans Drinks and How to Mix ‘Em” by Clisby Arthur. It was the Restaurant La Louisiane’s house cocktail. Herbaceous, well-rounded and thickened by anise-flavoured absinthe.

OAXACA | 22 Tequila, Mezcal, Agave, Bitters This modern classic was created in 2007 by Phil Ward New York-area bartender, owner of Mayahuel. Bold and Smokey with a smooth round finish.

EL PRESIDENTE | 18 Cuban Rum, Dry Vermouth, Cointreau, Grenadine, Bitters This classic cocktail was made in honour of Mario Garcia Mencal, president of Cuba from 1913 to 1921. Rich and lightly sweet. Refreshing with layers of flavour.

BETWEEN THE SHEETS | 22 Cognac, Cointreau, Light Rum, Lemon Juice This recipe is an adaptation of an adaptation. An addition of rum to a classic Sidecar brings out bold bright flavours with a balances citrus finish

TROMBA | 22 Tromba, House Vermouth, Maraschino, Bitters A twist on the sweet-vermouth Gin Martinez (the original inspiration for the martini). Bitter sweet with light nut and pepper notes.

BIJOU | 22 Gin, Green Chartreuse, Sweet Vermouth, Orange Bitters The french term for “jewel” because of its color, and father of the cocktail, this drink is adapted from the original Harry Johnson recipe from 1900. A semisweet cocktail that starts off smooth and ends with an herbal note.

DESSERT COCKTAILS

IRISH COFFEE | ITALIAN COFFEE | 20 Fresh Coffee, Brown Sugar, Irish Whiskey, Heavy Cream Joe Sheridan, head chef of the restaurant at the Foynes Flying boat terminal in County Limerick in early 1940s served the drink and was asked if it was Brazilian coffee, and Sheridan cheekily replied that it was “”. A rich and bold after dinner treat.

BRANDY | 20 Brandy, Crème de Cacao, Heavy cream, Nutmeg This cocktail was most likely born at Rector’s, New York pre-Prohibition lobster place, created by barman Troy Alexander. Rich and creamy boozy chocolate treat.

PINK SQUIRREL | 20 Crème de Noyaux, Crème de Cacao, Heavy Cream, Mole bitters It is said that the Pink Squirrel was created in the early 1940's at a cocktail lounge in Wisconsin. Rich and creamy nutty concoction.

ESPRESSO MARTINI | 20 Vodka, Espresso, Kahlúa Created in 1983 by Dick Bradsell at the Soho Brasserie, London for a customer who asked for a drink to “wake her up, and f**k her up.” The drink originally started its life as the “Vodka Espresso”. The perfect pick-me-up.

THE COFFEE COCKTAIL | 20 Cognac, Tawny Port, Full Egg, Angostura, Nutmeg This classic comes from Jerry Thomas’ 1887 “The Bartender’s Guide” The name is a bit of a misnomer as there is no coffee in the cocktail, but when made correctly it looks a bit like coffee.

DIGESTIVE COCKTAILS

VIEUX CARRÉ | 24 Cognac, Rye, Sweet Vermouth, Benedictine, Lemon Oils First appearing in print in 1937 in the book, Famous Drink of New Orleans written by Stanley Clisby Arthur, the book credits the drink to Walter Berrgeron, head bartender at the Hotel Monteleone, a beautiful hotel in the French Quarter, now famously known as the Carousel Bar. Complex, dark and smooth.

STINGER | 22 Armagnac, Crème de Menthe, Branca Menta The first recipes for the can be found in the 1890’s. During prohibition it was preferred cocktail as mint and sugar could mask the inferior alcohol. The recipe we use is a slightly drier version.

GRAPPA OLD FASHIONED | 22 Aged Grappa, Angostura bitters, Lemon and Orange Garnish A grape-ier version of this classic Old Fashioned. Perfect as an after dinner drink.

SIX AMARO SAZARAC | 20 Amaro Nonino, Montenegro, Averna, Capo Capo, Cynar, Campari, Peychauds, Green Chartreuse Inspired by the the 8 amaro variation at Amory Amargo in New York

TORONTO | 20 Rye, Fernet, Sugar Syrup, Angostura Its earliest written incarnation is as the “Fernet Cocktail” in Robert Vermiere’s 1922 “Cocktails- how to Mix Them”. “This cocktail is much appreciated by the Canadians of Toronto” - Vermiere. A richly flavoured, mildly bitter cocktail.
