KOREAN FRIED BAO Through Annie’s Window

If I said you can combine two Asian cuisines in one, would you be down for it? HECK YEAH! KFC Bao - Bao is the perfect bite or party appetizer that you can bring to any get together. Everyone will rave about them and they will definitely be a show-stopper.

INGREDIENTS

Dry:

3 cup of AP flour 2 tbsp granulated sugar 1 tsp 2 tsp instant dry yeast

Wet:

3/4 cup warm water 3 tbsp milk, any will work 4 tbsp soft unsalted butter Individual small squares of parchment paper

INSTRUCTIONS

1. Using a stand mixer, hand mixer or by hand add all your dry ingredients in a bowl and mix together. 2. Stir together your wet ingredients until it is smooth.

1 3. Combine dry and wet ingredients together and knead and roll in a ball. When you poke a hole through the dough and it takes a slow time to bounce back, that means your dough is ready to rise. 4. Using a large bowl, add 1 tbsp of cooking oil and place dough in to rise for 1.5 hours or until it in size. 5. Take the dough out and knead again. Divide into 16 balls. 6. Roll out each ball into an oval and brush with oil. 7. Fold the dough over, using a chopstick placed in the middle of the dough to leave a little space in the fold and place on individual square parchment paper. 8. Place on a baking tray to rise for 1 hour. 9. Using a steam basket or steam pot, place buns in the steam pan and cook for 10 minutes.

For the Korean Fried Chicken… ​ ​ Marinade:

1 lb diced cubes chicken breasts 1 cup of buttermilk 1 tsp kosher salt 1 tsp ground white pepper 1 tsp

Coating:

1 1/2 cup of AP Flour 1 tsp of salt, celery salt, ground , chili flakes, garlic powder, smoked , and baking powder

Sauce:

3 tbsp gochujang paste 2 tbsp honey 3 cloves minced garlic 1 tbsp minced ginger 3 tbsp light brown sugar 3 tbsp lite soy sauce 2 tbsp sesame oil

INSTRUCTIONS

1. Sliced your chicken breasts in cubes and add buttermilk, kosher salt, ground white pepper and garlic powder. 2. Mix it together and allow it to marinate for 1 hour in the fridge. 3. Combine your chicken coating.

2 4. Mix together your sauce and place it in a pan to bring to a boil. 5. Remove your chicken breasts from the fridge and coat. 6. With a large pan of until hot, add your chicken cubes and fry. Make sure not to put in too many at once. 7. Mix chicken together with sauce. 8. Combine your bao buns and Korean fried chicken and top with sliced cucumbers, pickled daikon, sliced red onion and sprinkled with white and black sesame seeds before serving. 9. ENJOY!
