Ethiopian: Very floral— too much so for certain palates —but some smaller growers also produce beans that yield a complex yet low-acid cup. Dominican: Higher-altitude, shade-grown beans from this Caribbean island offers a mix of earthiness and sweetness. Jamaican: A little pricier, but the soil profile and altitude of the Blue Mountains make for an intense flavor profile.

Whatever the varietal, though, make sure you go organic. The flavor profile is more pure and delicious, not masked by pesticides and chemicals. And make sure you go fair trade too. You want to guarantee those hard-working families a good wage, don’t you?

We can’t wait for noon to roll around, and yet it is a hard workday truth: Lunch rarely gets the attention it deserves. More often than not, most of us just head to the same deli to place the same order because it’s fast and easy. And that’s if there’s even time to leave our desk. That stops now. Our food-forward friends at Citarella are here with tips that are guaranteed to help you rediscover the glory of the midday meal. 2. WHEN IN DOUBT, VISIT THE ROTISSERIE A single roast chicken goes a long way. Pick one up at the beginning of the week, and it can get you through two or three meals. Eat it as is or in a sandwich, or stop by the salad bar, choose your favorite ingredients and invent a tasty bowl.
