Roasted Brussels Sprouts with Trim and discard sprout ends. Cut sprouts in half. (Save loose leaves for use in salads or slaws.) Toss Walnuts sprouts with walnut oil and salt. Transfer to large, 1 to 1 1/4 pounds 1/3 cup walnut pieces rimmed baking sheet. Roast at 400 degrees until Brussels sprouts, 1/4 teaspoon kosher salt sprouts begin to caramelize, approximately 25 minutes. washed and 2 tablespoons freshly Remove from oven, give sheet a good shake and then thoroughly dried grated parmesan add walnuts. Garlic Roasted Broccoli Place florets in large bowl and thoroughly toss with oil and minced garlic. In separate dish, combine salts and 16 ounces fresh broccoli 1/2 teaspoon kosher salt black pepper. Sprinkle seasonings over broccoli and florets (approximately 1/4 teaspoon black toss until all seasonings adhere to broccoli. Scatter on 8 cups) pepper large, rimmed baking sheet and bake at 425 degrees 1/4 cup olive oil Freshly grated parmesan for 20 to 25 minutes, or until broccoli shows signs of 2 cloves garlic, minced cheese (optional) browning. Shake pan halfway through cooking time. 1 teaspoon garlic salt Garnish with parmesan cheese before serving, if de- sired. Makes 6 to 8 servings.

Sautéed Bok Choy In small, dry sauté pan, toast sesame seeds over me- dium to medium-high heat, stirring constantly. When 2 teaspoons sesame Sauce: seeds begin to brown, remove from heat. Allow to seeds 3 tablespoons soy sauce continue toasting in pan until evenly browned. Remove 1 bunch bok choy 2 teaspoons brown sugar from pan and set aside. Whisk together sauce ingre- 2 tablespoons peanut oil 2 teaspoons rice vinegar dients and set aside. Wash bok choy and trim away 1 small carrot, grated 1 teaspoon freshly bottom 1 to 1 1/2 inches. Pull head apart and split each grated garlic leaf along rib. Chop into 1-inch lengths. Heat peanut 1/2 teaspoon freshly oil in large, open pan or wok. Add chopped bok choy grated ginger and sauté over medium-high heat for 5 minutes; add grated carrot. Continue cooking and stirring an addi- tional 1 to 2 minutes, or until just tender. Remove from heat, toss with sauce and sprinkle with sesame seeds. Serve immediately. Makes 4 servings.
