DRIZZLE IN THE OLIVE OIL SLOWLY, CONTINUE WHISKING UNTIL EMULSIFIED. USING A VEGETABLE PEELER OR A COARSE GRATER, SLICE SHREDS OFF THE VEGETABLES INTO A BOWL.
