My deepest appreciation goes to Patsanee (Joy) Khantisouk, Nouanchan (Chan) Khantisouk, Kulamany (Tuey) Kulavady, Joy’s sis- ter, and the rest of The Boat Landing Guest House and Restaurant staff. They have skillfully created and served delectable northern Lao food to thousands of diners over the years. Each has unstintingly shared their expertise with me. Chan surpassed herself by working with me just hours before birthing her son! This book would not have happened without the vision of Bill Tuffin, so integral was he to the establish- ment, nurturing and success of The Boat Landing Guest House and Restaurant, as well as this book. Such friendships as those with Joy, Chan and Bill are precious and irreplaceable. Joy’s husband, Sompawn, and his parents, Paw (Khanty) and Mae (Awn), are inextricably part of The Boat Landing and Luang Namtha. Thank you for your commitment and contributions. Warmest thanks are also extended to Khamsouk Philatorm and her family for sharing with Kees and myself friendship and deep knowledge of Kmhmu’ food and culture. The Kmhmu’ villagers of Ban Goop were also exceedingly generous. Dozens of Lao friends have been bombarded with my questions and have been most gener- ous in their willingness to advise and teach. Ny Luangkhot, Boutsady Khounnouvong, Phetsakhone Somphongbouthakhan, Phongsamouth Sisayavong, Khamhuck Keobounhouan, Mali (Daen) Khongsysy, Noudsala (Tik) Khaovong and my colleagues from the Rural Development and Research Training Center are among those friends. Thanks too to Steven Schipani, Joost Foppes and Sounthone Ketphanh, Deputy Director of Lao’s Forest Research Center at NAFRI. Southone was key to identifying the scientific names of the bamboo and rattan and some local forest foods commonly eaten in northern Laos. Dr Somran Sundee’s expertise was crucial for definitively solving the taxonomic mysteries of the Lao basil, pak i tou. Susan Ritter, my eagle-eyed editor, knocked my prose into shape, was a joy to work with and became an even firmer friend during our months of labour. Tara Gujadhur and Thongkhoun Soutthivilay, co-direc- tors of the Traditional Arts and Ethnology Centre in Luang Prabang, proofed the Lao and information on ethnic groups and spearheaded an out-of-season search for ant eggs. Dana Saur came to the rescue in many ways. He righted my computer which was felled by a virus in the final stages of editing and provided sustenance to both Kees and myself through much of the book’s final writing by curing the best salmon in Thailand available at Schoss Cafe in Pattaya. This book benefits greatly from my husband, Kees’, photog- raphy. I thank him too for endless patience, suggestions and support. On behalf of both Kees and myself, appreciation goes to everyone who agreed to be photographed for the book. vi vi Contents v Acknowledgments viii Foreword ix Introduction 10 The Boat Landing 11 The Boat Landing Guest House and Restaurant 12 Meet the people at The Boat Landing 14 Culturally rich Luang Namtha 18 Akha ອາຄາ 20 Kmhmu’ ກຶ ມມຸ Khmu 22 Tai Lue ໄຕລື (ໄທລື in Luang Namtha) 23 Tai Dam ໄຕດຳ (ໄທດຳ in Luang Namtha) 23 Kalom ກໍ ລອມ, Tai Yuan ໄຕຍວນ (ໄທດຳ in Luang Namtha) 24 Lanten ແລນແດນ Laendaen, Kim Moun ີຄມມູ ນ 26 The northern Lao kitchen 28 A Lao meal 30 Your Lao foodstuffs 31 Measurements 31 Substitutions 33 Ingredients 63 Traditional kitchens 64 Preparation techniques 70 Cooking techniques 72 Common northern Lao dishes viivii 74 Noodle dishes ອາຫານປະເພດເຟີ aharn bhaphet fer 82 Lao dipping sauces ແຈ່ ວ jeow 92 Stews and soups ຊຸູ ບ ຫືຼ ເອາະ ແລະ ແກງ soop, or/aw and gaeng 120 Stir fried dishes ປະເພດຂົ ້ ວ bpaphet khoua ້ ້ ່ 126 Stuffed, steamed, grilled and fried dishes ປະເພດ ອົ ວ ໜື ງ ີປງ ືຈນ bpaphet oua neung ping jeun 138 Salads, yams and light dishes ປະເພດ ຍຳ ຊຸ ບຜັ ກ ຕຳສົ ້ ມ bpaphet yam soop pak tam som 146 Lahp and sa dishes...& out and about ປະເພດລາບແລະສ້ າ bpaphet lahp leur sa 156 Kmhmu’ hospitality 159 The Boat Landing staff picnic, December 2003 162 Rice dishes ປະເພດເຂົ້ າ bpaphet kao 172 Sweets ຂອງຫວານ kawng waan ່ ່ 175 Drinks ເຄື ອງດື ມ keuang deum 180 Bibliography 182 Index 195 Lao index 200 Lao transcription using the English alphabet Food from Northern Laos viiiviii Foreword This cookbook is the fruit of a special friendship would consider ‘unpalatable’, I worked with Joy to create which knows no distance, age, race, culture or religion, a menu that would give our guests a window into a typi- of a friendship where all have become as family, caring cal Luang Namtha table.
