The resulting flavour is a refreshing one with piquant notes of calamansi and green mango against with the mild, sweet flavour of the sustainably farmed red drum fish from Maldives and savoury taste of the pork crackling. The dish is a delightful complement of textures as well with the crispiness of the pork crackling, light crunch of the green mango, firm succulent bite of the red drum fish.
