Settlers to the area soon followed from England, Scotland, Wales, Ireland and Germany and many established villages such as Stirling, Crafers and Bridgewater. The cool, green park-like environment of the hills reminded them of home. Arthur Hardy later planted the first vineyards in the Adelaide Hills right here at Mount Lofty House with Red Madeira. From there the Adelaide Hills Wine Region was born. Jump forward to the 1970s and 1980s and enter a new group of pioneers including Brian Croser (Petaluma), Stephen George (Ashton Hills), Michael Hill Smith and Martin Shaw (Shaw & Smith) and Geoff Weaver. Over the next 30 years the region became known for its premium, cool-climate wines. More recently it has become a mecca for small artisan winemakers keen to produce elegant, long lasting European style wines and push the boundaries to new heights. The Basket Ranges kinfolk certainly smash those boundaries with a range of styles emerging from their corner of The Hills, such as minimal-intervention, natural and orange wines. Head south to Gumeracha, Ashton and in to Piccadilly Valley and you’ll meet chardonnay fanatics and pinot-philes alike. Nebbiolo from Gumeracha is not to be dismissed either, but leap to the opposite end at Macclesfield and you’ll not only discover this grape in abundance surrounded by brilliant shiraz. We also mustn’t forget that Méthode Traditionelle Sparkling is truly alive and well throughout these hills. Quite simply, our wine-folk are a passionate breed that hone their skills to achieve the very best that the Adelaide Hills has to offer! Dine with us for a long story degustation and we will take you on a journey through the Adelaide Hills. From the exciting place that is The Basket Ranges, through emerging varieties that respect our rich European heritage (hallo Grüner Veltliner!). We will honour a rich history of cool-climate Chardonnay and Pinot Noir right on our door step, Nebbiolo’s from north (Gumeracha) and south (Macclesfield), that’s not to forget championing Syrah and Cabernets that are elegant and oh so tasty. In South Australia, we are a parochial lot and can’t help being a little biased about what we do. BARREL AGED For over six months, these classics have been patiently waiting, gaining complexity, in former sherry barrels, and are now ready for you to enjoy. Saluti! NEGRONI 26 MANHATTAN 30 FIRE BLUE FIG OLD FASHIONED 25 Old fashion style, dry fig infused Bulleit bourbon is stirred with chocolate bitters and brown sugar, served with Tasmanian blue cheese on the side. THE ITALICUS 22 Our seasonal take on the classic Negroni. Extra dry vermouth is enriched with lavender and stirred lovingly with Tanqueray gin and Italicus bergamot liquor. FIGHT FIRE WITH FIRE 22 One favoured by all bartenders, the blazer is a winter-warmer in both the figurative and literal sense. Simone’s version warms you with Ron Matusalem Gran Reserva rum, Solerno blood orange liqueur, chocolate and a touch of orange bitters. EARTH BERRY TEA 22 Find your inner peace with a combination of cognac infused berries, Espirit de Figues, hibiscus tea & finished with cherry bitters. Served in a cast iron teapot. MOUNT TIKI 22 Get a ticket for an exotic, wild trip and be ready to taste a large range of flavours and spices. A blend of Havana Club 3 Anos rum, lemon and Aperol, homemade Falernum syrup, lime juice and passionfruit. Finished with spiced water and home-made orange soda. UNDERWOOD 22 Hunting the earth for truffles. Served up, truffle-honey infused bourbon and Averna amaro are stirred and chilled to perfection. 10 COCKTAILS AIR TO BE OR NOT TO BE 43 A wonderfully refreshing mix of Skinos Mastiha, Capo Capo Aperitivo Bitter Trentino, rosé wine, hibiscus tea and a splash of Grapefruit. Served in a Crystal Head Vodka bottle and topped with liquid nitrogen. Suitable for sharing between 2 to 4 people. MEDITERRANEAN PERFUME 22 A Mediterranean twist of the king aperitif: “The Negroni”. Rosemary infused Gin Mare from Spain, Otto’s Vermouth from Greece, Campari & Mirto Liqueur from Italy. BREEZE 22 Taste the ocean breeze with an unusual combination of apple, Midori, Ketel One vodka & Mezcal Soledad. Shaken, double strained & served in a Martini glass. WATER SMOKE IN A MIRROR 22 A Margarita, but not as you know it. A spectacular serving of Herradura tequila, Grand Marnier and lime, stirred lovingly with our house made pear reduction. Garnished with dried Pear. GREVE IN CHIANTI 22 Taking inspiration from the flavours of Simone’s home district in Chianti. Salami and rosemary-infused vodka is stirred with cabernet sauvignon washed ice. Served up and to be savoured. MADE IN OXACA 22 Full of warming, comforting flavours you’ll feel right at home with this grown-up version of an espresso martini. Coffee-infused Mezcal meets white chocolate liqueur and Pedro Ximenez. Delicious! HER FRIDA 22 Painter, Frida Kahlo, was a Mexican self-portrait artist who was married to Diego Rivera and is still admired as a feminist icon.
