Military decorations are appropriate for this occasion. For ladies, formal dresses or kilts with Scottish accoutrement. Flat footwear is encouraged for after dinner dancing. Kilt rental/purchase is available through a variety of Scottish establishments. It is advisable to reserve rental kilts before Thanksgiving. Order of the Evening The birthday of the Scottish poet Robert Burns is traditionally celebrated on 25th January. “Burns Suppers” are highly popular in Scotland and follow a traditional format. Preceding the night’s events will be a cocktail hour and an opportunity to bid on Silent Auction Items. The night’s format will be as follows: 5pm – 6:30pm Cocktails, Silent Auction, Scotch Tasting Opening Address The Selkirk Grace The piper leads in the chef carrying the Haggis to the presentation table. The haggis is paraded ceremoniously through the assembled guests as they applaud its arrival with a "slow handclap". Address to the Haggis (It is customary to stand for the toast to the haggis with a glass of whiskey) The Presidential Toast, Toast to the Queen (Please stand for the toasts to the Office of the President of the United States of America and to the Queen of the United Kingdom) Following the Toast the men may remove their jackets Dinner The Immortal Memory (Culminates with a Toast: “To the immortal memory of Robert Burns”) Ode to the Lassies The Lassies Reply Songs and Poems from the Floor Burn’s works and other Scottish artistry Vote of Thanks At the end of the evening someone will propose a vote of thanks and summarize the presentations Auld Lang Syne Dinner is Adjourned All Guests join in Scottish Country Dancing 9pm-10pm after a brief Interlude Retire to the Bar or to Quarters Menu Plated Dinner Starter: Haggis, Neeps and Tatties Salad: Beefsteak Tomatoes and Herbed Fresh Mozzarella, Aged Balsamic Vinaigrette Choice of Entree: Pan Roasted 8oz. Filet of Beef Tenderloin (all medium) Sauce Bordelaise Rosemary Herbed Roasted Potatoes Roasted Vegetables ** Freshly Baked Rolls & Butter Dessert: Cranachan (traditional Scottish Dessert containing cream, toasted oatmeal, raspberries and a little whiskey) Beverages included in dinner price: Iced Tea, Sodas, Coffee, Water SPECIAL DIETARY PROVISIONS: by request Scotch: The following choices of Single Malt Scotch Whiskey will be available: Usquaebach, Laphroig, Glenlivet, Speyburn, Balvenie, Glenfiddch The Haggis The beast is made from a concoction of ingredients that are mixed and inserted into a sheep's stomach bag, which is then tied tightly at both ends and boiled. The ingredients include lambs liver, oatmeal, suet, stock, onion, salt pepper and other seasonings. In recent times the sheep's stomach bag is often replaced with a collagen sausage skin. The Haggis is ceremonially piped into the dining area (all stand) and following the recitation of “Address to a Haggis” and the theatrical cutting of the haggis with the ceremonial knife, all guests are invited to share in the eating of the Scottish fare "His knife see rustic Labour dight, An cut you up wi ready slight, Trenching your gushing entrails bright, Like onie ditch; And then, O what a glorious sight, Warm-reekin, rich!" Dancing Following dinner and after a short interlude, a Ceilidh Band will provide entertainment, Scottish Country Dancing will commence and the bar will remain open. He is widely regarded as the national poet of Scotland and is celebrated worldwide. He is the best known of poets who have written in the Scots language. He is regarded as a pioneer of the Romantic movement, and after his death he became a cultural icon in Scotland and among Scots around the world. Celebration of his life and work became almost a national charismatic cult during the 19th and 20th centuries, and his influence has long been strong on Scottish literature. In 2009 he was chosen as the greatest Scot by the Scottish public in a vote run by Scottish television channel STV. As well as making original compositions, Burns also collected folk songs from across Scotland, often revising or adapting them.
