Dindori Reserve Shiraz 2015 Region/ Origin: Nashik valley, India Residual sugar: 0.02% or 0.2g/L Total Acid: 0.64% or 6.37g/L Alcohol: 13.5% v/v Final pH: 3.63 Blend: 100% Shiraz Winemaker’s Notes: Grown on the red hills of our Dindori estate and barrel-aged in American oak, our Dindori Reserve Shiraz is a powerful, intense wine, with flavours of berries and vanilla and a long pleasing finish. Vineyard: • The selected lots came from certain blocks of our Dindori vineyards, which has hills and gentle slopes with gravel red soils rich in iron and calcium. • These selected grapes are planted on the top of gentle slopes and were hand harvested. • The yields were restricted to very low levels. The vines are irrigated by drip irrigation and are trained high on wires using the open U trellis system. Fermentation and Aging: • The grapes were destemmed and the must with partial and whole berries was immediately pumped into red wine tanks. • The grapes were initially cold soaked and then fermented between 25° -30° C. • The fermenting wine was pumped over daily to wet the cap and extract enough colour and tannin. • After the wine was dry, the skins were pressed gently and malolactic fermentation was carried out. • The wine was aged in 45% new oak barrels for 8-10 months before being racked off and bottled in another 2-3 months time. The wine has been bottle aged for nearly 3-4 months before release. Food pairings: Pairs beautifully with meat dishes like mutton biryani, seekh kebabs and lamb roast. Allow to breathe before serving. Serve slightly chilled: 60-62°F The 2011 Dindori Reserve Shiraz was ranked #25 in the Top 100 Wines of 2014 by WINE ENTHUSIAST magazine with 93 points the first ever Indian wine to make the list, a singular honour from one of the world’s leading wine magazines..
