Wahlburgers Sloppy Joes Serves 4 Ingredients For the spicy-herbed mascarpone: 1/2 cup mascarpone cheese 1 teaspoon fresh thyme, leaves removed from stem, very finely chopped 1 teaspoon fresh parsley, leaves removed from the stem, very finely chopped 1/2 teaspoon fresh rosemary, leaves removed from stems, very finely chopped 1 teaspoon chipotle peppers, seeded, diced 1/2 teaspoon sea salt 1/2 teaspoon freshly ground black pepper For the sloppy joes: 1 pound ground beef, preferably Wahlburgers beef 1 small white onion, small diced 1 (8-ounce) can petite diced tomatoes 1 tablespoon ketchup 1 tablespoon brown sugar 1/2 teaspoon Worcestershire 1/4 teaspoon garlic powder 1/4 teaspoon sriracha 1/4 teaspoon apple cider vinegar 1 tablespoon dried parsley 2 teaspoons kosher salt 1 teaspoon freshly ground black pepper 4 hamburger buns Directions 1. Make the spicy-herbed mascarpone: In a medium bowl, add mascarpone. Stir in thyme, parsley, rosemary, chipotle peppers, salt, and pepper until well combined. 2. Make the sloppy joes: In a large frying pan over medium heat, cook beef, stirring to break into bite-sized pieces, until cooked through. Drain in strainer, reserving 1 ounce rendered beef fat. 3. Return fat to pan. Add onions and cook until translucent. Stir in paprika and cook 1 minute. Add tomatoes, ketchup, brown sugar, Worcestershire, garlic powder, sriracha, vinegar, parsley, salt, and black pepper. Reduce heat to medium-low and simmer, stirring occasionally, until liquid starts to reduce and thicken. 4. Stir in cooked beef. Let simmer 5 minutes. 5.
