Nutrition Study Guide Due to increasing concern about food safety, food tasting will no longer be part of nutrition judging (2016). Participants may bring food, if they choose, but it will not be tasted and will not influence their project score. Additionally, each individual will be assigned a specific time for their nutrition judging (similar to Special Interest Judging). Each individual's project grade will be based on the following 3 areas: Project Book Review (25%), MyPlate Questions (25%) and Portfolio Review and Interview (50%). Intermediate Nutrition Project 486 ‐ Dashboard Dining Activity 1: Rating Your Hunger Describe the difference between true hunger and a craving in your own words o Hunger is when your stomach feels empty, a craving is associated with a taste Activity 2: Eating the Right Portions Why is it important to know the right portions for each food group when eating at a fast food restaurant? o They often serve more than the correct portion size that your body needs and you may overeat Name all 5 food groups o Grains, Vegetables, Fruit, Dairy, Protein Activity 3: Making Healthful Choices In your research, what did you find was the best way to eat healthier at a fast food restaurant? o Eat smaller portions (smaller drinks, sandwiches, sides), order grilled instead of fried chicken, choose fruit/baked potato instead of fries, etc. Activity 4: Selecting Nutrient‐Rich Foods Give one example of both a nutrient rich food and an empty calorie food o Nutrient rich = fresh fruit, whole grain breads and pastas, skinless chicken, fat free yogurt, low fat milk, etc. o Empty calorie = French fries, potato chips, candy, pop, refined grains (white bread and white rice), etc. Activity 5: Designing Your Meals What did you find most difficult when planning meals at your chosen restaurants and what could you do to improve next time? o Varying answers (no whole grain options, healthy is more expensive, etc.) Activity 6: Comparing Fast Food to Homemade Food Why is eating homemade food healthier than fast food, even when the findings showed the homemade had more sodium and lower protein than the fast food option? o Look at the big picture and balance your meals (you can't eat fast food for every single meal and be healthy) Activity 7: Checking for Restaurant Cleanliness What are 3 signs of a well‐kept, clean restaurant? o Parking lot free of trash, clean floors/tables, employees wear gloves and hair is pulled back, clean kitchen, clean restrooms (trash taken out, floors clear of paper towels), etc. MyPlate Study Guide Questions Beginner (Let’s Start Cooking, Everyday Food and Fitness, Snack Attack, Fast Break for Breakfast): 1. Identify the correct name of each food group represented on MyPlate. o Dairy, Grains, Protein, Vegetables, Fruit Intermediate (Let’s Bake Quick Breads, Sports Nutrition: Ready, Set, Go!, Grill Master, Star Spangled Foods, Party Planner, Racing the Clock to Awesome Meals, Dashboard Dining): 1. Identify the correct name of each food group represented on MyPlate. o Dairy, Grains, Protein, Vegetables, Fruit 2. What type of milk does MyPlate recommend? o Fat‐Free (Skim) or Low‐fat (1%) 3. Name 2 foods to eat less often. o Cakes, Ice Cream, Sweetened Drinks, Cookies, Candies, Pizza, Fatty Meats (ribs, sausages, bacon & hot dogs) 4. Soda, energy drinks and sports drinks are a major source of what? o Added Sugar o Calories Advanced (Yeast Breads on the Rise, You’re the Chef, Global Gourmet, Beyond the Grill, Pathways to Culinary Success): 1. Identify the correct name of each food group represented on MyPlate. o Dairy, Grains, Protein, Vegetables, Fruit 2. MyPlate recommends that you eat what type of grains? o Whole Grains 3. Half of your plate should come from what two food groups? o Fruits and Vegetables 4. How many minutes of physical activity should you have each day? o 60 minutes 5. What color of vegetables does MyPlate encourage us to eat more of? o Red, Orange and Dark Green (need to list all three) *Reminder, each nutrition project requires a portfolio component. During judging, the judge will ask open‐ended questions about each activity in your portfolio. This will be a reflection of your experience with this project.
