Be it a big bold Napa Valley Cabernet Sauvignon, an earthy, spicy, South African Pinotage, or an aromatic floral Torrontes from Argentina, wine is the ultimate partner in a “loving” relationship with the Chef. Wine compliments the food as much as the food compliments the wine, bringing out small nuances of tastes otherwise unnoticed if not for the pairing. When you’re from “here and there” (that’s what Saldo means in Latin), you don’t need to form to one, single place. That’s the funny thing about expectations—they’re made to be broken. Dark ruby color with bold aromas of black licorice, black pepper, cherry, and baking spice. The entry is rich, full, and scintillating. The palate is mouthwatering and smooth with a hint of chocolate. The finish is voluptuous with soft, velvety tannins. The aromas continue onto the palate with added layers of charred meat, rhubarb, thyme, surrounding a dark fruit core.
