Honey Strawberry Vanilla Trifle Ong Jing Ting, Founder of Puffs and Peaks bakery @puffsandpeaks Ingredients Instructions 1 punnet of strawberries Shortbread Crumble 1. Preheat oven to 170°C for 20 minutes. Shortbread Crumble 2. In a mixing bowl, sift the plain flour and add sugar and salt. 130g plain flour 3. Using your fingers, rub the cold butter cubes into your dry mix until the 60g unsalted butter (cold and cubed) mixture resembles a crumble. There can be some larger pieces and some smaller pieces. If required, sprinkle more flour to achieve a more crumble- 50g fine sugar like texture. Pinch of salt 4. Line a tray with parchment paper and loosely spread out the crumble. Bake for 25 to 30 minutes, until golden brown in color. Halfway through at the 15-minute mark, use a spatula or spoon to rearrange the crumble to ensure even browning. Honey Cream 125g heavy cream 5. Once fully baked and golden brown, remove from the oven and let it cool to room temperature. Store in an air-tight container until ready to be used. 17g honey Pinch of salt Honey Cream 6. Chill a metal mixing bowl in the freezer for 20 minutes. 7. Once ready, pour heavy cream and honey into the mixing bowl. 8. Using either a hand-whisk or a stand mixer, whisk heavy cream until it Serves: 3 - 5 500ml cups; Prep time: 2 hours forms medium to stiff peaks. 9. Once ready, store in an air-tight container in the fridge, until ready to assemble. Instructions (Continued) Assembling the Ingredients 10. Wash the strawberries. Remove the stems and slice half of them into thin slices. These will be used to line the sides of the dessert jar. The other half of the strawberries will be cubed. 11. Line the sides of each dessert jar with thin slices of strawberries and fill the center with cubed strawberries. 12. Add 2 tablespoons of honey cream, followed by a good sprinkling of crumble. 13. Repeat this process and layer with strawberries, honey cream and finally, crumble. Top off with some slices of strawberries if desired. 14. The trifles are ready to be consumed immediately, or can otherwise be stored in the fridge for a day. It is highly recommended to be consumed fresh so that the crumble maintains its crispiness. .
