At eight months old it has a fi rm yet creamy texture and rich diverse fl avours with sweeter overtones. Distinctive eyes are scattered throughout the body of the cheese. All of the milk to produce this unique cheese comes from the family’s dairy farm. It is named after the fi ve Ysselstein brothers, one of whom is the owner and cheesemaker at Gunn’s Hill. Winner, Firm Category, 2013 Canadian Cheese Grand Prix Mountainoak Farmstead Premium Dutch Aged Gouda Mountainoak Cheese Ltd. New Hamburg, Ontario • mountainoakcheese.ca After emigrating from Holland in 1996, the van Bergeijks started dairy farming, however their love of cheesemaking soon had them making cheese for their own consumption. Luckily, with encouragement from family and friends, Mountainoak Cheese opened their doors in the fall of 2012. Starting off with the fresh raw milk from the family’s herd of Holsteins and then thermalizing it creates the full fl avour in this cheese, which is slightly sweet and nutty. The hint of caramel on the fi nish is beginning to develop, characteristic of longer aged Gouda styles. Tomme des Demoiselles • La Fromagerie du Pied-de-Vent Îles-de-la-Madeleine, Québec • fromagesduquebec.qc.ca Aged between six to eight months, this fi rm washed rind cheese is made with thermalized milk from a single herd of Canadienne cows. The fodder grown on these remote islands gives the cheese the distinctive salt water infl uenced character. Fresh cream and brine are part of the lovely aromas that greet you while the resulting fl avour is fruity. Two small hills on the island were the inspiration for the name of this cheese.
