For other reviewers, I ruled out 2 tablespoons of salt, and it was just right without it. I doubled this recipe to fill 16 ounces of bottle. I used balsamic vinegar, which makes this an extra special. It seemed that the amount of oregano was excessive, but in fact it is fine once mixed and poured on the salad. This dressing is mixed and tastes best when ingredients are allowed to marry overnight in the fridge. Finally a wonderful salad dressing that tastes as good as any in an Italian restaurant - we loved it! Update - Since I doubled the recipe, I've used 1 tablespoon of garlic salt and one tablespoon of garlic powder, which really gives this dressing a smooth taste with less salinity. After that quite a few times, adding a little more sugar will temper down the sour taste. I was also enterprising and added dried, chopped onion bits. Delicious! 04/09/2007 To reproduce the Good Seasons blend, add 1 tablespoon of dried mixture of red and green pepper (found with dried spices) plus 1 teaspoon of dry red pepper flakes. In addition, I suggest that you lower 2 tablespoons of salt. You can add 1 tablespoon of lemon pepper (not lemon salt!) to increase the zest. Experiment with balsamic vinegar, fruit juices (orange juice is great with red wine vinegar) and flavored oils. Side notes: Mix the vinegar and 2 tablespoons of the mixture and let sit for at least 5 minutes before proceeding with the recipe. This helps dissolve individual spices and herbs. You don't need water. You only need that with good seasons mix, for goodness knows that a chemical reaction will happen. This dressing will not remain emulsified (mixed) when stored in the fridge. Just shake it long before use. 09/18/2003 I make my own Italian armbands the most but I use a ton of Italian sauce mixture when I cook and it becomes very expensive. This recipe is great. I used it for everything from marinating steaks to popcorn. I think it's actually more fragrant that packaged kind. I didn't, however, try to make it into dressing though. In B that complained about the lack of zestyness I would suggest adding a couple of red pepper flakes to your sauce. This should increase zing. Hot sauce also works, but you tend to be might try it more pepper. I also cut the salt in half. I was just worried that 2 T was too much. I was right, the salinity was perfect for us. I recently added this mixture to a 50/50 mixture of mayo/sour cream to make a vegetarian dip. That was great. I'd say it would also be great for chips, or if you dilute it with a little milk, it would make a big ranch sauce. Again , I left salt. This is the best, simplest, most useful and versatile recipe I have found for Italian salad dressing on this site. It's wonderful as is and I've done it several times with changes to our taste of the day. I used olive oil, rapeseed, red wine vinegar, cider vinegar, balsamic and combinations of them. I also replaced the saltless seasoning (only a cheap kind of large lots) for salt. All of these changes work well. Replacing marjoram or spicy for thyme, celery seeds for celery salt, 1/2 garlic powder for garlic salt also works well. Sometimes I add a syringe or two of spicy brown mustard when mixed in oil and vinegar. Thanks for introducing it. 04/26/2004 I loved this recipe. When spooning out the condiment mixture, I felt like I couldn't get quite a lot of granular seasoning and puff seasoning. The next time I do this, I will separate items such as sugar, salt, onion powder, pepper, celery salt from items such as basil, oregano, parsley, thyme and a spoonful of 1T each (granular and flaky). The great thing about this recipe is the versatile Italian season mix. I spoon out this mixture into a cold pasta salad and I spoon some into the homemade pasta sauce. You don't have to use this just for salad dressing. Give it a shot. Experiment with it. 04/14/2005 This is a very good dressing mix. I agree with many other reviewers though.... I use less salt and either the whole garlic powder or a mixture of galic salt and garlic powder. Like Stephanie I also prepare this in a good season cross. I use the lines on the bottle (vinegar water oil) and 2 heaps of tablespoons of this mixture. 12/09/2009 I had problems with this recipe, but I was able to make it work for me. First of all, it's too salty. Use garlic powder instead of garlic salt and cut the salt back (1 teaspoon or less). Secondly, I had problems with both dry and liquid ingredients separating. It is difficult to combine flakes with pellets. the liquid won't mix together, so I used an emulsifier that I read about a couple of months ago at Cooks Illustrated. I came up with this combination: 1 tablespoon vinegar, 1/2 teaspoon of each dijon and mayonnaise ( ( 1 teaspoon flakes from the mixture, 1/2 teaspoon of pellets from the mixture, slowly drizzle in 3 tablespoons of olive oil during whisking. It worked brilliantly, and the bandage remained homogeneous! 05/23/2004 It was amazing! I used olive oil instead of rapeseed oil and used only 1 tablespoon of kosher salt. It's cool.
